To be clear about multiple polar diagrams. It is to support different sail plans or even motor time. Squares will be displayed along the route to indicate "sail changes" when the polar used is changed. The fastest polar that defines boat speed for the conditions is used, so some polars may not be used above certain wind speeds or wind angles if they do not define boat speeds there such as spinnaker polars. a typical motor polar diagram may only define speeds when the wind is below a certain value.
