Hi David, a simply stunning beer. First taste after 2 weeks in the keg. Used 1kg blood orange purée and 4 day dry hop. This is my 4th all grain brew and first with added fruit and now encouraged to try more of this style. Thankyou 👍

Wow. What a coincidence. I recently went for a doctor’s visit and she asked me to consider a fruity hoppy wheat beer to get me into the summer mood!!! I’ll be brewing this so it’s ready for July!! Slainte David!

Hey Curt, I am sorry to hear that. You could use the same recipe without the wheat, replace it with munich malt. It will not be the same but very good anyway 🍻🍻😎

man, your recipes are gold! I've brewed about 10 of them and they always impress me. Will definetely try this one too, since I live in the state responsible for 70% of the global orange production (São Paulo / Brazil), so orange sourcing is no problem here =)

Yes, Ive been working on this for a while and the orange fruit totally hits the spot. I suggest puree, ive been buying a French brand called «Ponthier» but any good qaulity orange puree should work.

Can't wait to try this! My current obsession is fruity and juicy IPA's, and all my favorite commercial beers here in Denmark almost all have juice added, even my Mangrove Jack's Juicy Session IPA kit had added fruit juice. In general i find it hard to find resources on adding just a bit of juice to homebrew, most results are either "use these hops to get that flavour" or "making a fruit beer", so i am very grateful for this! I am new around these parts, and would have never considered adding the juice in with the dry hops! I assume puree adds a more full flavor, but i think I'll try juice when experimenting to avoid pulp. One thing i had considered was "dry hopping" with citrus zest and a bit of lime juice. I brewed a batch of Doin The Most's zesty mead which uses zest of orange, lemon, and zest and juice of lime and was amazed at how much citrus character you get from almost only zest, especially considering the small amount needed.

Great. Puree for sure adds more flavour and avoids the chemicals that can mess with your fermentation often contained in juice. I would suggest brewing this «as is» alot of tweaking has gone into getting it into this tried and tested state.

Hi David, thanks for sharing for another one of your great recipes. By now I have tried many of your recipes and must say they have all tasted very good. I had one more question about dry hopping. I would like to avoid hop creep and am considering lowering the temperature during dry hopping to 15 degrees Celsius. Do you think I should apply this for this recipe as well? For Neipa beer this always works out well for me. Cheers!

Great to hear, I spend a lot of time working on the recipes 🍻🍻🍻. You can but ive never suffered with hop creep personally and use a variety of fermentation temps. The real trick is to avoid adding dry hops too early and keep contact time limited.

Turns out Nectaron hops are hard to come by in this neck of the woods. Went with Mosaic instead as it seems a popular alternative.

Thank you for providing this great content. I like to ask the final volumen of the batch once you added the orange puree, is it 5gl? I have access to fresh oranges, what is the best way to may your own?

1) When I enter this into Brewfather and edit it for my system, should I reduce the amount of water that I start with to adjust for the volume of puree that I'll add during the fermentation? If not, won't I end up with too much beer? 2) In BF, I entered the water profile you suggest - including the 5.2 ph. But BF calculated it as 5.8. My plan is to add enough lactic acid to bring the BF calc down to 5.2. Good plan or skip the lactic and trust BF Is water chemistry too big of a subject for a video?

Thats definity going on the brew list for summer!! Any suggestions on how to reduce the gluten some what? I have been using clarity ferm for some beers recently, just to try and reduce the gluten but ive not tried swapping grains yet. Just looking to reduce gluten, not eliminate

Great to hear. Yes you can use products like clarity ferm. They remove most of the gluten, just not all.

Definitely doing this as my next brew. Will split the batch and do 10ltr exact to recipe, another 10ltr I'm going to use a mango puree 😬

hi, I'm pretty new to brewing and I have invested in a brewing system, I have seen a lot of brewers doing a sparge like you did, and I was wondering why do people do this if there is enough room in the system to just put all of the water into the mash, cheers.

Hi, its for two reasons. Firstly the sparge washes through sugars increasing efficiency, secondly it improves flavour.

I used a brand called “Ponthier” but any quality puree will work or you could make your own. Enjoy 🍻🍻🍻

Thank you. There is nothing else quite like this yeast. If you cannot obtain it then I would go for a neutral type like Fermentis US-05. Enjoy 🍻🍻🍻

Yes it is. The fruit adds very little abv but lots of flavour when added late like this 🍻🍻😎

G'day David, I'm curious how much orange puree you used. The description & the bf link indicate 1kg of fruit, shall I assume that's 1 Litre of puree? Many thanks for the recipe ideas, you bloody legend.

Oh really, according to colour, the purée looks like normal orange, not blood orange that I would expect to look a way more red. From your previous experiment what other fruit would you recommend? Mango, mandarin anything else ? Thanks a lot

Yes, the blood orange is still very orange. Fruit wise this one was designed around orange but I would imagine other citrus fruit would work just as well.

You could try making your own puree from oranges but I suggest avoiding orange juice as its usually full of chemicals.

Really interesred to hear if youve had any issue using puree/concentrates with potassium sorbate and whether it has made any noticeable difference with inhibiting the yeast finishing out. Only tried once with a cherry puree and found it quite difficult to source anything without any added preservatives
