On our way to southeast of Turkey, we decided to make a short stop to see how everyday life looks like in a provincial town. Although we are talking about a small town located in the heart of Anatolia, Sivas is a place full of history and caravan stories. Located at the intersection of the caravan routes from Persia and Baghdad, the city was once an important trading center.
Here we met the first madrassas and were impressed by their beauty. We discovered a colorful and lively city, and the attitude of the locals towards tourists did not disappoint us 🇹🇷
As for the city's cuisine, we tasted two of their local soups! The first was Kelle Paça, a soup made from the cow's and sheep's head, legs and stomach. The pieces of meat are cleaned, kept in cold water to get rid of the bad smell and boiled for 10 hours, until the water becomes gelatinous and the meat separates from the bones. No salt or spices are added during the cooking process. The second, Ayak Paça, is a soup made from the animal's feet. It is one of the most popular and frequently eaten soups among Turks. It is consumed with garlic and vinegar, especially in the winter season due to the benefits it has on the body 🐑🐑🐑
Our experience was far beyond our expectations. We loved Sivas!
