For anyone wanting to use the recipe on their website, be aware of 2 issues with the written recipe. 1) When beating the eggs and sugar, while it doesn't say it but don't add both together right away or you won't achieve the stiff peaks needed for folding into the batter. Anyone not familiar with this technique may end up wasting eggs and time trying to reach the required consistency without knowing it won't form. Instead, add a little bit of sugar to the egg whites and start beating to get the whites to combine and start forming a cloud-like substance then slowly add the rest of the sugar until you reach stiff peaks. 2) The recipe clearly states that you add the chocolate to the sugar water but in the "tip" section for the glaze, it mentions that if the glaze is too thick to add any left over sugar water from your pot. What you should do is add the sugar water to the chocolate instead to control the thickness of the chocolate glaze. Following the recipe, I've added the recommended chocolate to the sugar water and it came out super thin. I still had some chocolate left over but it wasn't enough to thicken it to the consistency shown so I have a thin glaze instead. Adding the sugar water to the chocolate gives more control and won't run into the issue I had. Aside from those 2 (IMO), big issues, the rest of the recipe followed easily.

Thank you for the tips, I tried a lot to achieve close to the above result but I could not. My issue somehow ended up dense cake base was not enough fluffy. This is what I do, I melt the chocolate and keep it aside. I beat butter until it forms like a cream and add the egg yolk and I add sugar mix it and add melted chocolate I add flour with the help of stainers and whisk it with my hand, bake it at 160'c for about 1 hr. Is there something i am missing? Thanks

@@Bishwashpoudel I'm an amateur (or I consider myself an amateur) but I do know that with this sort of recipe that you don't want to mix too much or for too long. Because you're working with making a meringue, you want to fold your mixture instead of beating them together. You only want to mix enough that it comes together. If you overmix, I believe you end up with something more dense (like what you encountered).

overhyped BS. Just grab a moist chocolate cake and infuse it with apricot jam and coat it with a mix of dark chocolate/cream. Of course even if the home recipe is better, its impossible to beat the branding and the history.
