Why would a builder put such a large, expensive home on such a small lot? If you're going to pay $$$$$ for a house, you don't want your neighbors so close you can hear them snoring at night!

They do it all the time. People don't spend a lot of time in their yards in Florida due to the heat and humidity. So most people don't really want a large lot anyway. And then builders can sell more houses on the land, maximizing their profits.
