(spoiler warning) 15:18 in season 3 Azula knows also because she knows everybody's weaknesses soon and Azula had a whole childhood spent with Zuko, she'd know if he was unsure with his words, lying, being truthful, etc. This ability is displayed when she huddles Zuko, Tylee, and Mai for the volleyball game to strategize, she notices the slightest hesistation of her opponent's foot and using that to win. Also when Aang was doing his avatar state float Azula defied the laws of physics of cartoons and just shot him wiith lightning because she must have known that if the avatar is killed in the avatar state it will permanently end the avatar cycle, that was one of his weaknesses. Those are examples, another example is, she was the one who killed Aang. She controls her lighting and she would never underestimate anyone, much less the avatar. Azula would never just get Zuko all the glory like that, she would probably never even want Zuko to live with her or be associated with the royal family. She wanted to weaken the avatar, the avatar would come to attack whilst he thinks everybody thinks he's dead, but Azula would still know, and Zuko would be exposed after the day of black sun, because she knew about the day of black sun, had tortured Zuko into being self conscious about it, she probably calculated that Zuko would come clean during the time she again uses somebody's weakness to make her plans follow through, distracting Sokka by talking about Suki and in her calculations would mean black sun would be over, she would kill the avatar once and for all, Zuko would be again banished and not have a chance to regain his honor, She would get all the spotlight, and the Fire Nation would rule.

3:42 I know that the Mai/Zuko pairing has a special place in the writers hearts and I think I know why. The Ba Sing Se girl was just apart of Zuko’s journey to peace and good. I believe Mai is a part of Zuko’s childhood that represents a happier time before his life went bad. They were each others first crush. I think they held onto the happiness they once had and came back to each other in the end. I think, to each other, they both represent innocent happiness that transcends chaos and emotional torment.

Actually Azula didn't treat Mai or Ty Lee as badly as she did everyone else. She actually complimented their work when they did good such as "Good work girls" and she apologized to Ty Lee when she made her cry and even when as far as to admit her own insecurities to her. That just says a lot. That pretty much means that Azula really did care about these two girls. Which is why she snapped when they betrayed her. Yes, she may have been keeping them around to use them but the way she treated them was better than the way she treated everyone else.
