Well I can at least explain the tail shape. Sheep are born with a long tail but it is "Docked" AKA cut down to a small stump to prevent health issues that happen since fecal matter would build up on the tail leading to Flystrike which is which parasites infest the sheep. (Happens to other animals like rabbits as well.) Thus Watame who can clean herself easily has a natural tail rather than a docked one.
