I do most of my prep at home before the trip. One standby I always take are baked potatos. I microwave them, stuff them with all the fixings and wrap them well with foil. They keep for days and can be warmed up anywhere quick. Good with some chili and cheese dumped over the top too.

love the cooking parts, Shaun. I drove up to my local 4x4 spots in Nor cal over the last few days but because of those wildfires ( Caldor and Dixie) during August they now have dozers and excavators removing dirt dozer lines and dead trees so they don't fall on the highways and block the rivers. No wheeling for me for a bit. Living vicariously as a wheeler thru you guys.

Camp breakfast wrap. Scrambled egg with sauteed veggies in the pan. Toss a tortilla in on top so it sticks to the eggs. cover it for a bit so it heats up. Flip it over and lay in some beef strips or thin sliced left over steak with mushrooms and peppers (sauteed in Guiness flavor bbq sauce or your choice). Cover in a Swiss cheese slice. Fold and feed!! Camp favourite for our crew.

Coconut Chilli chicken with coconut rice and damper. Start with 3 brown onion roughly chopped, 2 tablespoons garlic, 200g chilli ( a mix of long red chilli's, habaneros and ghost peppers), coconut cream, lime, coriander, chicken thigh or breast, with the rice its standard coconut cream water and basmati rice, and traditional damper. Don't forget the salt and pepper for seasoning. 🌶🌶🌶🌶

Century eggs go with congee, or served cool with Chinese black vinegar and ginger in small slices, and definitely not eaten on its own as a whole egg! 🤣 It's still an acquired taste, but it's not half as unpalatable as if you ate it like a typical boiled egg. Love all your adventures and shenanigans! And Shauno's cooking always looks scrumptious (in the end, anyhow). 😋

The traditional Chinese way way to eat thousand year old eggs: Mix vinegar (always using dark vinegar ) with minced ginger, the finer the ginger the better the flavour. Chop the egg into 4 or 8 portions and dip it into the sauce you made. Also you can put chopped thousand year old eggs in porridge with lean pork meat that is chopped into very small piece. Put salt! the porridge is suppose to be salty!

Fresh fish cut into large bite size pieces and deboned. Place in a camp oven with a tin of coconut milk, juice of half a lime , grated lime zest, salt , pepper, a little sweet chilli sauce and a diced mango. Lay kaffir lime leaves on top and cook gently in hot ashes til fish is tender. I developed this recipe from inspiration from a Malcolm Douglas episode. He used a barramundi.

Chili peppers. You get the thickest chilies you can find and cut them in half. If you want spice dont scrape the seeds out but cut them out, if you dont want spice use a spoon and scrape them out (it will take the seeds and the spice membrane out of the chili. Once the seeds are removed you stuff the halves with cream cheese then you put your pre cooked meat of choice on the cheese, then you wrap in bacon and put it in the hot plate or camp oven for about 15 minutes
@markphillips69983 жыл бұрын
I don't know if you get them in aus but on UK coastlines we have something called cockles and they get stored in vinegar or brine, there the inside of shellfish...... I love but folks find em......... Interesting haha and for cold weather camping we used to cook up some soup or a quick stew and then get a tiger loaf cut it onto half's, hollow the bread out and then fill the empty loaf shell with the soup/stew and you have an edible bowl with fresh bread to dip in it 👌

Not quite a dinner, but my dad make a hell of a campfire desert.
