Once, I was at a hawker centre in Bedok South waiting to fetch my son from army, a few years back. My wife and myself ordered a plate of Hokkien Mee. After we bought it, I saw another stall selling the same food - the famous stall where the chef wears long sleeves shirt and a rolex watch while cooking. The first one tasted greay just like any other Fried Hokkien Mee stall. The rolex uncle's has a special oomph to it. No horse run. Way way better than normal good Hokkien Mee.

The long sleeve uncle wears a rolex to stir fry the hokkien mee. His stall is called Kim's hokkien mee. He uses a very big fire to stir fry the mee and the noodle has wok hei. Very yummy. But just not long ago, he died :(

802 Tampines is really quite good. May not be mind-blowingly good but it settles the craving quite well

mian wang 1971 at bukit gombak has hokkien mee with char siew (super charred and oily but darn good)! They also have hokkien mee topped with salted egg calamari. There isn't much good hokkien mee but this is damn gooddd!

@@mavcly imo, they are consistent and i love it that they use either the thinner kind of thick beehoon or thicker kind of thin beehoon to compliment the whole dish. and NO TOWGEH. i also always mix the chilli and lime together.. oooo heavenly. 😁
