It is SO incredibly exciting that Robert gets to join you soon! After the first of the year my hubby will be taking 3 day weekends every other week and 4 day weekends the other weeks. :)

A common part of an advanced HACCP plan is a change of control process. If something out of the ordinary happens, you can document the occurrence, assess the risk, and if the risk is minimal, proceeded with production. In this scenario you would have a change of control form that would document the occurrence and be saved in your records.

50k people, wow! Congrats! You and Robert are putting so much work into this business, I hope it pays you back in multiples. I can't even imagine chopping up cabbage for 780 pounds of kraut. If you do find a way to make kimchee powder/salt, I would love to try that. Finally, I will say that you will be able to get that commercial food processor by early next year. You need that to not wear out your wrist.

Some of the more tedious things like volume and parts of the kimchi are really irritating but other than that no, I love nearly all of it. I’m learning so much and as a total fermentation nerd being able to track so much info is really fun!

Ok, I know you guys are super busy and I should shush, but I'm waiting for my sheep (new shepherdess) to produce milk for me this spring and wondering if at all possible to show dehydration of kefir for a starter or etc. I'm intimidated. Does freeze drying even work for those cultures/grains? No killing off... Hmmnnn 🤔 Could just look around online still...but something about Fermented Homestead vibes I just flow with Much Love ❤️ ~April Your channel has helped me greatly. I'm pretty vegetarian unless raise the meat on homestead, but my 14 year old is a prolific meat consumer. Wasn't working with her body until I found confidence through your channel to Carpe diem fermenting many food/beverage items for her (us) to have in abundance. Well, success. Of course animal feed is fermented now too lol. Total turn around in my confidence within capabilities in this area and in health all around for family's different needs and the animals we raise. Again, the vibes, teaching/mentoring style and comfort feeling facilitated on this channel is responsible for my growth and abundance in fermented foods, beverages, oil salves and feed for the animals. Much gratitude !! Congratulations on the KZbin subscribers achievement! ❤

I’ve been wanting to try it but we aren’t keeping kefir grains right now, our main home fridge went out and keeping the milk cold was too much for me. I would think freeze drying would give a better chance for survival

Yes if you add a starter culture you can use half the salt, but it will ferment faster and won’t taste quite as good
