You just do not do things by halves - so with your interests you want to become as knowledgeable as possible about them so you spend time researching as much as you can. I've lived in Italy nearly all my life and the version of minestrone I know is a base of soffritto (onion, celery and carrots) and seasonal chopped veggies and some kind of bean and we let it cook with water and herbs. You can let it reduce to your own pleasure, my husband prefers it brothy, I prefer it more dense, and we eat with rice (Lombardia, Milan area) or pasta (more to the south of Italy). The nice thing about minestrone is that you can eat it all year round switching the veggies and it can be eaten both hot or cold. In summer it is great with a dollup of pesto. It is a staple of our diet. I always have some ready to eat in my fridge, I make it fresh a couple of times a week.

As someone living with a cancer diagnosis I really wish Charlie wouldn’t throw the word around like that. Cancer refers to a huge variety of diseases, many of which cannot be attributed to lifestyle or exposure to certain things, just random cell mutations. Would it hurt to be more specific? Otherwise it just seems to be used for dramatic effect.

My thoughts are with you. I completely agree and commented in a similar vain. It is actually pathetic - there are very many reasons someone may have cancer including family history. The fact that someone also edited this video and left that comment in and also presumably Josie approved it is mind boggling and can mean it is only to get the comments up. I wish you well with your treatment and your recovery x

I love listening to you and Charlie sharing all your learnings on the food industry / ingredients / nutrition etc. I've recently moved to the US from the UK and it is truly WILD what's allowed here! Food shopping is an extreme sport, it's so hard to find foods that are genuinely organic / non-GMO / just whole!! The level of additives is crazy and as you say in this video it's actually so sad that these corporations are allowed to put profit before health, it's the source of so many ills and a lot of people are just unaware and/or unable to afford better food. I have a 1-year-old so I've been paying extra attention to this since moving here and I'm so careful with what we give him and also with what we're eating/drinking. My husband and I are on a similar journey to you and Charlie so thank you for raising awareness on this issue and please do keep talking about it! ❤

I love when you share the things you’ve been listening to and reading on the nutrition topic! My husband and I have slowly taken things out of our family’s diet over the past 6/7 years. My poor kids love cereal and that was one of the first things we took away because of the things they allow in it in the United States. We finally have found one that is better (not super great) for a once in a while bowl of cereal. I make a lot of things from scratch because they put soy lecithin in everything and we don’t believe soy in everything is good for us all. The commercial companies they promote tell them it’s scientifically proven and they instantly believe them, while the research involved is of poor quality, heavily biased and untrue. The results are manipulated in their favour. Moreover, the health experts she talks about are sponsored KZbinrs, so please… seek professional advice instead! Josie is a fashion & beauty expert. As you were talking about the Citizens of Soil olive oil - which honestly was a game changer for me (you might want to mention that you can also have a subscription “by monthly” for anyone who feels they wouldn’t go through a bottle a month - which certainly wouldn’t - just wanted to ask a question as it comes in pouches - how do you clean your olive oil container before putting the new oil in - as I didn’t want to leave any residue of the old oil.

Hi Josie I may stand corrected I have been taking Symprove for 9 months. From my own independent research from accredited studies , I was assured that as SP is water based it does not activate the gastric juices or digestive enzymes. That way you are receiving the full strength into your colon. Correct me if I am wrong I would love to know. Love the videos xx

Josie, I love the depth you provide on nutrition! I also find it fascinating. For example, I just bought Girl Scout cookies from my precious little neighbors. I cannot deny them a sale, but it bothers me the thin mint cookies have artificial flavor. I cannot eat any of that, I learned in my 20s how sick it would make me. Frustrating. Im in U.S. and I have been reading labels since my 20s and Im turning 60 in March. Anyhoo, love the "apparently" kid imitation!!! Lol, I love that kid! You are adorable.

Wellness room sounds great. I currently have a walking pad in my kitchen to ‘make it easy’ and have not used it in 2 months! 😔 I do step over it multiple times a day so perhaps it is time to use it or relocate it to the spare room. Josie I am so excited for your wellness/recovery room! I'd suggest the little raised nook for your red light. I don't think you need 4 panels - just two should be fine (one for front, one for back). Mine are from Hooga - they make excellent products. I also have their PEMF mat which is lovely.

Oh, getting to the end of your vlog and you’ve just mentioned our fires. So many friends have lost everything. Currently we are surrounded by fire. to the north, the east, west and finally the Palisades fire to the south. The firefighters have done a masterful job. While I’m so grateful we have not (yet) been evacuated, we lost all power for 4 days…we’ve paced up and unpacked three times..the stress and exhaustion of it all…I actually thought of you & your recent trip here and wondered if you realized just how close to Brentwood the Palisades fire came…anyway, thank you for thinking of us…❤

Onion/carrot/celery in Italian food is Soffritto, in French food is Mirepoix :) the Minestrone I make is mainly the same except I always add Cavolo Nero and two types of beans (cannellini and whatever else), then sometimes add bacon too :)
