My Honey Crisp Apple Jelly did not set..so there was nothing to do but to re-batch it! Waste Not Want Not!

See , this is why I like this channel , It didn't work , most YTubers would NEVER show that , but Bev's like , " ya it didn't work, but lets do it again " .... gotta be real about things , now this will help others who thought they would have failed, especially if new to canning

Oh my goodness! I have 12 jars that didn't set and I didn't know what to do with them. Thank you, thank you, thank you. I thought I had used all that sugar for nothing. Now I know I recook it. You are awesome!

When you're making Jams/Jellies you should pop a few saucers into the fridge overnight or at least a couple of hours before so they're good & cold. When your mixture is sheeting and you think it's gone far enough, take the pot OFF the heat source (on an electric stove that means move the pot OFF the hot eye onto a cold one). Drop some of the mixture onto one of the cold saucers and once it's cooled enough not to scald you, just push a finger from an edge towards the centre of the drop. If it wrinkles and a skin has formed over the drop you have a set, if you feel the set is too 'soft' and you prefer a stiffer product, let it boil for another 5 minutes. In the case of a jelly like this one, I think you're better to wait for it to 'Flake' off the spoon rather than 'Sheet'. Honeycrisp are a sweet Apple and I don't remember you adding anything acidic to the cores & skins when you boiled them down, a couple of Lemons squeezed into the pot would've helped, that's why they aren't setting like when you use Crab Apples, but this will help novice Jam makers who might have dumped the lot not realising that they could salvage a bad batch.

I am a newbie to canning and just made 5 little half pints of carrot/pepper jelly that didn't set, and now I'm sure I just panicked and didn't leave it on the heat long enough. OH and OMG, you used your jar picker upper to hold the hot jar!!! GENIUS! I love learning these tips and tricks from you generous folks:)

I’ve got to say my watermelon jelly did not set. I know after watching other videos I didn’t get it hot enough. Your video is best bc it doesn’t have you adding more sugar, pectin, lemon juice… I love that! Tyvm

Mrs. V, nest time do the cold plate method. Never fails for me to see if my jelly will set. Place a small plate in the fridge till it gets really cold. When you see the sheeting, place a small amount of the jelly in a line on the plate. Run your finger across the middle, and hold the plate sideways like you are wanting it to run off.. If it pools together and runs, it's not ready. If it stays in a clear cut line where your finger was, it's gonna set.

I made one jar apple jelly right along with you when you put out the original vid. It came out on the thick side, kind of between apple jelly and apple butter. I don't mind. I will use it in oatmeal. It can still be put on toast as well. I don't have a jelly bag so some pulp got into it. I was glad for your vid cause I liked the idea of no pectin and using cores, peels. Thanks Bev+

I think ive seen you use a cold plate to test the set? I was also taught to drop a tbs of the jam jelly onto the plate leave for a minute and run your finger through it to check. . Well done . My favourite is Seville orange marmalade.x

In the uk we pop a tablespoon on a side plate and put it in the fridge for 2mins. If it crumples when pushed it's done.

I’m having to recan the grape jelly I made two days ago. It only half set. I never had this problem before so your video was definitely helpful.

Mrs W, just made a trial batch of your snowball cookies to see how they freeze. Half made it to the freezer. I can now see why you need a lockable box! Delicious, I will be making more for gifts and our family for Christmas. It will have to be a triple batch I think. Thank you for the receipt.

I appreciate that you share when things don't turn out as expected. I had the opposite problem, I think I overcooked mine! It's so thick, I can barely scrape it out of the jar lol. Oh well, it still tastes good and we will still eat it.

When you open a jar..put it in a pot with a half a jar of water..remelt the jelly in the water and pour it back in the jar and pop it in the fridge! All you did was cook TO much water out!

I use Pomona's Pectin available at Amazon and I haven't had a jam or jelly fail in years.

I made frozen strawberry and didn't drain the water and added 1 pouch of pectin it didn't set. So I added 2 packs of Knox gelatin but still not setting what went wrong?🥴

We use to use it to make Hot Apple Cider as kids, even if it did set, we would still put several spoonfuls into hot water and YUMM! LOL And I'm with Howie, only real maple syrup. I hate all other syrup.

My mint apple jelly didn't set last year but after a, while I noticed it was jellied in the middle with more liquid on the outside I used one jar before this happened as syrup for tea instead of sugar very nice I like using less sugar but I find if you use the lower amount your making syrup instead of jelly Thats why I like to add crab apples too because the extra pectin helps

Hi Mrs. V...very interesting...I made freezer cherry jam last week that only half way set...but have another question...I watched the Kneady Homesteader make pineapple jam...I love pineapple..heard you say don't need to boil bath...thinking I will just make a half recipe of the pineapple and not boil bath...I don't really need a whole recipe, and could actually store those few jars in the garage refrigerator if needed...the recipe looked easy to cut in half..advise me, please!

You are dedicated! I don’t reprocess them. it’s my honey substitute for a year lol. Great in tea, overnight oats, sticky buns, little interesting sweetness in chili. Or if I want it to be jelly I take a jar, cook it down, the it’s ready to use and store in the fridge.

If you do decide to just use syrup, it's not just for pancakes. Also try it in coffee, eggnog, with cream cheese on anything, on ice cream, drizzle on white frosted desert, many ideas.

Know the feeling, well. I cook jelly to 225 degrees and cranberry sauce to 200 for whole berry and 205 for the jelled variety. I use my candy thermometer to check it. Like you, I use my hot water canner to clean jars and disinfect them and to can them. I use Sure Jell or pectin in my jellies. I have had to recook jelly, too. The worst one that I ever had was some mint jelly that I made. It was good jelly and finally set, half way, after a month or so in a dark place. I use my 27 quart canner. It will take a full flat of half pints and a half flat of pints.

My first time making apple jelly using peelings and cores. Well it was a flop, not only did it not set but it tasted like sugar not apples, that was a lot of work to make sugar syrup. Think I might try making apple butter instead.

What do you do if even after recooking, it sill will not set? Made cranberry pineapple jelly from juice. Recipe only called for sugar and lemon juice. If it still will not set, then what? Syrup?

I am so glad I found your channel! I made my first ever batch of apple left over jelly and it didn’t set, I was about to cry. You saved my jelly!!! I originally had three 12oz, one 8oz and one 4oz, after fixing it I ended up with just two 12oz and the one 8oz But I will try again. that’s what I get for being impatient and not waiting for my ball book to arrive. I purchased gala apples and even my apple butter came out runny. How do I fix that?

cook your apple butter down some more..either in a double boiler or in a roasting pan at 275 degrees F but stir it often so it doesn't scorch on the bottom.

@@BethyBlue YES...at like 250-275 degrees F and stir it every half hour or so until it is thick..( No lid of course) The higher the temp the more often it needs stirring..bear that in mind!

I made strawberry jam Oct 2021. It was still runny the next day, but had sealed. So I put it up. Was doing inventory and noticed they still are runny. Is it too late now for me to redo? Mar 2022.

I see you’re obviously very busy making videos etc but can you advise what sort of organic sugar you are using. I live in Ireland and I’ve had a quick look around and I’m a bit confused. My mum used to make gorgeous apple jelly but she used to use let’s say ‘normal granular’ sugar. Thanks fin advance for you advice.

I made crabapple jelly yesterday that did not gel. I had added sugar & pectin as per the recipe. Based on what you just did, do I NOT need to add anymore sugar or pectin?

Mine didn’t set but I believe it’s because I exchanged liquid pectin for powder pectin. I researched and learned they aren’t interchangeable.

Did you add pectin or just recook? I was looking for this very thing because my first effort at muscadine grape jelly didn’t set.

I had a batch that didn’t set for a week. Sometimes you might need to wait it out. All was ok.
