If you give it time there is no need for folding. The gluten shapes by itself if it gets time. Let it ferment many hours. Folding is more for French baugett style breads. Nice video, greetings from Öland. and how calming to make bread, no hurry, it is bread siesta time ;).

You've got to make more videos to show your progress. My second adventure was for 4 1/2 hours and I got stuck in the dark and had no lighting to get home.... I peddled home only with the light of cars behind me and in front of me, but I made it.

I see you basically just use the no knead wet bread method. I would like to contact you, but you do not post your email so it is difficult.
