Speaking of RNG i had an attempt where Naples wasn't released at all and was stuck in a situation where Naples had high liberty desire and strong nations supporting independence but their war never kicked off in time before the Ottomans decided to attack. Not super common (it happened only once for me in the handful of attempts i tried recently) but something to keep in mind and its better to just restart in that case

Is byzantium to big to be force converted? For example, 100% epirus, then intentionally lose the war and get yourself converted to catholic.

If you're just looking to Catholic, the "easiest" convert is the Latin empire event Byz gets. Only caveat is you have to defend against the Ottos instead of attack. Mean time of a year. Also disables achievements if you want those. Edit: Going Catholic also permanently turns off the mission that stops the pretender rebels until you're back to ortho. At least it did when I reformed as Monferrat.
