Hey Joe, love your channel. I’ve been cooking on pellet grills for many years. The debate over fat side up Vs down, is a 3 hour Jerry Springer style debate for 3 hrs, lol. The reality of a pellet smoker, Vs offset, is the radiant heat issue. If you want to try fat side up, as is typical Texas Offset style, put a large water pan under the brisket. Not for moisture ( which is debatable as far as moisture) but it provides a great heat sink to diminish radiant heat. On my LSG, this works great to develop the “sugar cookie” bark. Just a suggestion.

🤣🤣🤣 your spot on with that! One of my other friends suggested the same thing w the water pan, my problem is on my pellet grill I don't have a shelf but after reading your comment I'm curious about trying fatside up in my LSG and seeing how it comes out...🤔🤔 Stay tuned it might have to be done!!👊🏿💯💯
