I am amazed they managed to produce this special edition, as this was filmed in the middle of the pandemic. So no studio audience, only the production team there clapping along. Social distancing and testing of everyone.

Nope, the names are live. You can hear it in the real show, Roger Tilling sometimes gets quite excited when shouting out the names at the end of a close match.

Yes, that's how most charities work! Still means that there was 31 million left over for charity. If they didn't recoup the costs, then it would technically be the licence fee payers paying for the production costs and you would no doubt complain about that as well.
