More cells simply have a better airfoil shape and hence, better efficiency. The only downside to additional cells is cost. More advanced wings tend to have more cells because more advanced pilots are generally willing to pay more for the increased efficiency. The Nova Phantom is one fascinating example, having 99 cells, an EN-B rating, and a heafty $6500 price tag.

Trimmed out> you lose all EN-A safety when trimmed out. and the expected speed trimmed closed is more like 21mph
