I hate the timing for LC in this fight. Literally cuts you from using your last summon in the cycle. Do you just continue the combo after, or do you go straight into bahamut/phoenix once she is targetable?

Phoenix should be up by the time LC finishes, yeah. You have time to summon all three before she disappears if you only do two GCDs for each, too.
