My guess is that they did the “Banjo-Kazooie” style to allow easier localization. Don’t need different voice actors for different places. Great videos!

There's some things you got wrong about the music. So, in the original game, around half of the songs used CD-quality audio, while the rest of the tracks were heavily compressed, put in mono, and (due to a bug) slightly pitched/sped up. To this day, the CD-quality versions of these tracks have never been heard publicly, unfortunately. In Re-Pac, the CD-quality tracks from the original game are identical to the versions in the original game (except Krome Keeper is in mono for whatever reason.) The original's compressed tracked were instead remixed. Something to note is that the remixes are based on the bugged pitch/speed instead of the original intended one. The one exception to this is Corsair's Cove, likely because a snippet of the uncompressed song is in the original game, so they seemingly based their remix on that. The compressed launch tracks are particularly bizarre, since the entire reason for remixing the songs to begin with was to fix the compression issue, but compressing the remixes anyway just negates the point. I have absolutely no idea what they were thinking there. Even stranger, Under Pressure got a compressed remix at launch despite the original being uncompressed songs.

The Anubis boss was frustrating the first time I did it, as I had no idea what I had to do. Toc-Man was just obnoxious and tedious. Other than that, I had a great time with Re-Pac. Hopefully the sequel gets a remakel, plus some sort of couch co-op multiplayer as well.

In my second playthrough on Performance Mode I found Toc-Man a lot more frustrating so I see where you're coming from. Without the family members giving extra health the boss was a bit of a pain, especially that cannon segment with the chrome suit. Obscene difficulty aside, I'll give the original version of Anubis Rex credit in that the standalone rev roll pillars make it a bit more obvious as for what needs to be done. For me the new one wasn't so bad since by the time I finished the original I practically raised its kids and helped them through college so I wasted no time and ran for the first rev roll platform I saw without thinking twice. The difficulty overhaul it got was very relieving though, I was expecting to have to jump around those tiny platforms again.

To be honest Pac Man's story is whatever Namco feels like that morning. None of the games are really related with the exception of World 3 referencing things that happened in World 1.
