So roasted sweet potatoes last a couple days at room temperature? I just had one for dinner and the idea of bringing one on a flight with me sounds too good to be true. XD

Griffin Cerva yes! If you roast them face down on a nonstick surface, no oil, they’ll last at room temp at least 2 days! Even better if roasted whole with all skin on, they’re sold at asian grocery stores like that and are good for 2-3 days. Depends on climate ofc, maybe not on the sweatiest summer day 😉

Y e o r o b u n if you’re living at home and they’re doing all the grocery shopping + cooking, you’ll have to work something out with them. It can create extra work/cost more time + money for them to cook differently for you, so offer to help with grocery shopping, suggest recipes that are easy to make vegan that they can cook, set aside a portion for you, then add their meats + dairy or offer to do the cooking. Start by asking for one meatless meal a day or once a week even-it’s a huge change for a family to consider so approach it from a place of understanding and trying to make it easier for them. Also educate them, watch a documentary together and explain your reasoning too!
