I tried making this dish today and my daughter was ecstatic after eating it . She wants it saved for dinner as well. If we add half tablespoon of cow ghee to the serving it takes the taste to another level. We also call it as dhabdii. Amazing recipe and thanks for sharing it.

सर देखते ही मुंह में पानी आ गया और मेरी भूख भी बढ़ ग ई सचमुच में पहाडी़ खाने का सवाद ही कुछ ओर है और अब आप पहाडी़ डिश में फाणु, पलयो , मूली थिचोण या थेचू बाडी़, अरसे बनाना सिखायें ये चीजे जब मैं कोटद्वार में था तब खाया और अरसे मैंने गुमखाल में खाया और वहां विवाह में शामिल भी हुआ और मुझे बहुत अचछा लगा।

My 5 year old daughter loves this .. and we are in muscat .. पहाड़ी पालक तो नहीं मिलता पर फिर भी बनाते हैं और पहाड़ को याद करते हैं। खाने से ही सही पहाड़ से अपने को जुड़ा हुआ महसूस करते हैं। ❤️❤️

Hello chef! Thanks for promoting such a wonderful and nutritious kaapa...Just two points which need to be emphasized more.... 1. Kaapa...and other pahadi dishes...have to be cooked in an iron kadhai 2. Adding curd spoils the colour of kaapa to some extent and can be avoided...that's how I have eaten this lovely dish from my childhood.. ~From another pahadi

Your all dishes are amazing but this is not the way to make kaapa pahadi style..not at all authentic. पालक का कापा मिक्सी में नहीं पीसते। न ही सिलबट्टा। पालक लोहे की कढ़ाही में खुद ही गल जाता है और इसमें मुख्य रूप से बिसवार( चावल या गेंहू आटा ) डालते है जिससे ये थिक होता है और घुट जाता है। दही का कोई मतलब ही नहीं, वैसे झोली( पहाड़ी कड़ी)या खड़ मास की दाल( गौहत ,उरद साबुत) साथ खाया जाता है। सब्जी को रिप्लेस करता है। ये अपने तरीके में स्वादिष्ट होगा लेकिन आपके तरीके में कापे का ओरिजनल टेस्ट गया।

Adding dahi is a good idea since the iron from leafy veggies is better absorbed in the presence of something sour - but you are right - I make this with only sukhi lal mirch heeng and sabut dhania seeds and add the biswaar to the water released by the Palak

I enjoy your traditional recipes, Chef. I am, though, bothered by your one frequent statement: why do you say that Haldi is added for color? That too; however, Haldi/Turmeric is an important ingredient in Indian cooking for its healing/medicinal value. Much like Ginger, it is anti-inflammatory and a healing agent. And, Ginger, Cumin and Carrom Seeds (Ajwain) are often added to our Besan preparations as well as daals/beans and various legumes because they help digestion. With the exception of Chinese and some Native American tribes, we probably are the only culture in the world where food is not just to fill the belly, or satisfy the taste buds, but it is also naturally healing. And, by that I surely don't mean to include greasy/fried food or ghee and refined sugar-loaded sweets! 🤣

In hills area, we have our own uses for spices, infact some spices r used on injury directly to heal and disinfect. So its not like its not used for that purpose, but maybe not specifically in cooking.

इसमें लोंग, काली मिर्च भी पड़ती हैं।चावल, दही के स्थान पर बेसन को पानी मिला कर डाल सकते हैं।वैसे आपकी रेसिपी पसंद आई।हम इसमें प्याज नहीं डालते हैं

पहाड़ की शाक,सब्जियों एवं दाल़ें स्वाभाविक रूप से स्वदिष्ट होती है उनको थोड़ा घी/तेल, नमक डाल कर भी बनाया जाय तो वह जायकेदार बनती है।
