[ Kongnamul guk (Bean sprout soup) ] 4 servings
[ Ingredients ]
300g bean sprouts
11 cups (2L) filtered water
about 1/2 stalk (40g) green onion
1tbsp (20g) minced garlic
about 1 tbsp (10g) fine salt
1 and 1/2 tbsp (15g) soup soy sauce
1 (10g) Cheongyang pepper
[ Directions ]
1. Rinse the bean sprout and drain the water using a colander.
2. Finely chop green onion and Cheonyang pepper 0.3cm thick.
3. Add filtered water in a pot and once it boils, add bean sprout, soup soy sauce, minced garlic, and fine salt and boil over high heat.
If you use MSG, add 1/6 tbsp.
If you don't have MSG, fine salt can be replaced with flavored salt.
Add soup soy sauce to your preference.
4. Once it comes to a boil, lower to medium heat and boil it for another 5 minutes. Add green onion and Cheongyang pepper and simmer for one more minute.
The bean sprouts will remain crunchy if you take them out and pour soup on top when served in the restaurant.
