About Pai:
Pailin “Pai” Chongchitnant is the author of the Hot Thai Kitchen cookbook, co-host of a Canadian TV series One World Kitchen on Gusto TV, and creator and host of the KZbin channel Pailin's Kitchen.
Pai was born and raised in southern Thailand where she spent much of her "playtime" in the kitchen. She traveled to Canada to study Nutritional Sciences at the University of British Columbia, and was later trained as a chef at Le Cordon Bleu culinary school in San Francisco.
After working in both Western and Thai professional kitchens, she decided that her passion really lies in educating and empowering others to cook at home via KZbin videos, her cookbook, and cooking classes. Don’t know how I missed this but so glad I happened upon it now :) thanks for sharing your stories with us. Sadly food network doesn’t have much diversity at all so they really are missing out on having you on their channel but I’m so glad you did build up your own channel here on KZbin. I’ve wondered if Pai Lin is effectively Thai but of Chinese descent. I’ve wondered if, being from clear down in Haat Yai, if her family were Hakka & came up across the Thai border from Malaysia at the time the Malays were not so welcoming to the Chinese & the “Guest People”. So do you know if Pai Lin is Hakka or Chinese Thai of some kind?

You are so correct about the electric stove. I can only use gas outside, but mainly cook on my induction cooktop or wok cooktop which are electric. But it’s great to get an idea of cooking even though we use WAY LESS BTUs even in our COMMERCIAL stove. Oh, Congratulations
