The show stop doesn't fit really well to Paint the Night and i think the Disneyland Resort version in California are much better.

In my opinion it does. I guess it's "interactive", so you can change the colors of the parade (I think). The version is California is also really good! Both are equal, I guess.

Actually the problem is they stop for some reason and it's kinda funny though

You can purchase paint brush lights in HKDL and change street light and cast member costumes’ colour (still in effective pre-pandemic). It’s a very special chance for guests to take photos with floats and cast too. All parades in HKDL had/have stop sequences and it’s really a unique experience.
