PALAK DAL TADKA
Preparation time 10-15 minutes
Cooking time 25-30 minutes
Serve 2-4
Ingredients
For Cooking Dal
1 ½ tbsp Oil, तेल
½ tsp Cumin seeds, जीरा
5-6 no. Garlic cloves, लहसुन
A pinch of asafoetida, हींग
1 tsp Turmeric powder, हल्दी पाउडर
½ tsp Degi red chili powder, देगी लाल मिर्च पाउडर
2 cups split Urad dal, soaked, उड़द दाल
2-3 bunch Spinach, chopped, पालक
2-3 cups Water, पानी
Salt to taste, नमक स्वादअनुसार
For Tempering
2-3 tbsp Ghee, घी
1 tsp Cumin seeds, जीरा
2 no. Dry red chilies, सुखी लाल मिर्च
A pinch of asafoetida, हींग
Prepared Ginger Garlic paste, तैयार किया हुआ अदरक लहसुन पेस्ट
½ tsp Turmeric powder, हल्दी पाउडर
3 medium Onions, chopped, प्याज
½ tsp Degi red chili powder, देगी लाल मिर्च पाउडर
½ tsp Coriander powder, धनिया पाउडर
1 large Tomato, chopped, टमाटर
Salt to taste, नमक स्वादअनुसार
8-9 no. Urad dal papad, roasted, crushed, उड़द दाल पापड़
1 ½ tbsp Ghee, घी
1 small bunch Spinach, chopped, पालक
Salt to taste, नमक स्वादअनुसार
Boiled Dal, उबली हुई दाल
1 cup Water, पानी
½ tsp Lemon juice, नींबू का रस
Prepared Tadka, तैयार किया हुआ तड़का
Salt to taste, नमक स्वादअनुसार
A pinch of sugar, चीनी
For Ginger Garlic Paste
2-3 Green chillies, less spicy, हरी मिर्च
1 ½ inch Ginger, sliced, अदरक
6-7 Garlic cloves, लहसुन
Salt to taste, नमक स्वादअनुसार
For Tadka
1 tbsp Oil, तेल
4-5 no. Dry red chili, सुखी लाल मिर्च
½ tsp Degi red chili powder, देगी लाल मिर्च पाउडर
For Garnish
Fried dry red chili, तली हुई सूखी मिर्च
Coriander sprig, धनिया पत्ता
Process
For Cooking Dal
In a pressure cooker, add oil, once it's hot, add cumins seeds and let it splutter.
Add garlic clove, asafoetida, turmeric powder, degi red chili powder, split Urad dal and mix it well.
Add spinach, water, salt to taste and cook it for 3-4 whistles.
Keep it aside for further use.
For Tempering
In a kadai, add ghee, once it’s hot, add cumin seeds, dry red chillies and let it splutter.
Add asafoetida, prepared ginger garlic paste and saute it for a minute.
Add turmeric powder, onion and saute it until the onions are golden in color.
Add degi red chili powder, coriander powder and saute it for a while.
Add tomatoes, salt to taste, roasted papad, ghee and cook it for 2-3 minutes on low flames.
Add spinach, salt to taste, boiled dal, water and let it simmer for a while until thickens.
Add lemon juice, prepared tadka, salt to taste and mix it well.
Transfer it to a serving bowl, garnish it with fried dry red chillies and coriander sprig.
Serve hot with rice.
For Ginger Garlic paste
In a mortar pestle, add green chilies, ginger, garlic, salt to taste and make a coarse paste.
Keep it aside for further use.
For Tadka
In a pan, add oil, once it's hot, add dry red chillies, red chili powder and toss it well.
Keep it aside for further use.

I think Ranveer deserves a public service award for this show (and the other related ones). What he is doing here is nothing short of the highest public service. This is such an entertaining yet informative, educational and useful show, which can be so transformative for every household, while perhaps being the world's best encyclopedic compendium on cookery. It's probably going to be a legacy for all times to come. Just a watch of one episode, with Ranveer's signature style, shall I say, tempered with the tadka of humility and self-deprecating humor, is enough to make one's day. It just lights up one's life and brings such a bucketful of cheer...! Just radiates positivity all around. One can scarcely be more grateful for these educational assets. The entire production team deserves the highest applause. It's wonderfully videographed and scriptwritten, with not a single dull moment anywhere, while highlighting the key skills and techniques in its playfulness and totally uninterrupted engagement. That can only be produced with the utmost of care and attention to detail -- absolutely the antithesis of the 'sab chalta hai' that pervades our lives. Of course, Ranveer has also mastered a screen-presence that can be the envy of many a movie-star...! Method-action blended with spontaneity...! It's truly one of the delights of life to see excellence thrive in such measure somewhere...! An example for everyone. (Though I feel quite sure that Ranveer doesn't actually eat what he prepares. Beyond the morsels that he does on the show. I'm pretty sure one cannot maintain fitness of his sort, after eating the loads of oil, butter and ghee that are going into the preparations...! And if one can, there has to be a miracle somewhere. One can always adjust that at home, though, for a less calorific, if somewhat taste-compromised outcome...! And portions must absolutely be watched.)

This is my go to recipe ! Every year, I plant swiss chard in my garden here in USA. This dal is prepared with swiss chard or spinach depending upon garden harvest. Papad in dal is something new for me. Can't wait to try! Thank you for awesome recipe!

hi ranveer sir cooking mera hobby hai time milte he hi cook karti hu ajj mai class 12 exam dene ke baad he yeh recipe ghar mai try ki mtlb aap ke sath sath mai bhi cook kar rhi thi and coincidentally ghar mai sare ingredients hai jo palak daal mai lagte hai and while preparing the dish the aroma was amazing and my mom dad and meri bahen and mai abhi yeh dish bahut enjoy kar rhe hai superb taste hai aur mai aapko khate khate comment kar rhi hu .. thank you sir for sharing wonderful recipes .. and i have a wish ki mai zindgi mai ekbar masterchef mai jaaungi and woha participate karungi ...

Amazing recipe. Just made it today, everyone loved it. Was scared to add too much chilli powder and chillies, ginger etc. as shown by Ranveer but believe me the dal absorbs all the heat and tastes absolutely heavenly! Follow the recipe to the tee. Hi chef.. two things.. 1. Editor need not add the knife hitting the board artificially as in many videos it’s off.. 2. If u try and rub lemon on your knife blade then you won’t cry learned many years ago at my culinary school.. does work for me. Thank you again for keeping cooking alive.

Ranveerji... Ek dum badhiya👌🏻... Aur aapka gaana toa ji bas🥳🥳🥳🥳👌🏻👌🏻... Mea housewife hu... Normally easy recipe try kar leti hu.. Jab se aap ko dekhne lagi hu kuchh naya banane ka confidence aagya aur gajab baat toa ye hea ki achha ban bhi jata hai aur gharwalo se tarif bhi miljati hai so, thank you somuch... Aur ek baat mea Gujrati hu Mumbai se ab 14 yrs se Kerala settled hu..aap ko kichh samay pehle hi dekhna suru kiya hai but now big fan of yours... Maine aaj hi dal palak banaya tha lunch me 😊main hamesha chana dal use krti hu shadi k baad sikhi thi n meri mummy yellow moong dal use krti h..but urad dal phli baar dekha .I will definitely try it along with papad ka tadka jo phli baar suna aur dekha 😊👍🏻
