Recipe
Ingredients
Oil - As required
Capsicum / Shimla Mirch - 1 Diced
Cottage Cheese / Paneer - 1 Cup diced + As required
Dry Coriander Seeds / Sabut Dhaniya - 1 tbsp
Fennel Seeds / Saunf - 1 tsp
Cumin Seeds / Jeera - 1/2 tsp
Cinnamon / Dal Chini - 1/2 Stick
Cardamom / Elaichi - 2
Black Peppercorns / Kali Mirch - 5 to 6
Dry Red Chilli / Sukhi Lal Mirch - 2
Almonds / Badam - 5 to 6
Cashews / Kaju - 7 to 8
Green Chilli / Hari Mirchi - 1 Slit
Ginger / Adrak - 1 Inch finely chopped
Water - As required
Salt - As per taste
Curd / Dahi - 1 Cup whisked
Coriander Leaves / Hara Dhaniya - A handful
tsp = teaspoon
tbsp = tablespoon
Instructions
1. Soak almonds and cashews separately in the water for 30 minutes. Keep it aside.
2. Heat 1 tbsp of oil in a pan. Add capsicum and 1 Cup of diced paneer. Mix well. Saute it for 2 to 3 minutes on medium flame. Keep stirring occasionally.
3. Once done, turn off the flame and keep it aside.
4.Take dry coriander seeds, fennel seeds, cumin seeds, cinnamon stick, cardamom, black peppercorns, and dry red chilli in a pan. Roast it on low flame for 3 to 4 minutes till the nice aroma begins to rise. Keep stirring occasionally.
5. Once done, turn off the flame and let it cool down. Then transfer it to a grinding jar and grind it for a few seconds to prepare its dry masala. Store it in an airtight glass container.
6. Take soaked almonds, cashews, and 1/2 Cup of paneer. Grind it for a few seconds to prepare its puree. Add a few drops of water and grind it again for a few seconds to prepare its puree. Keep it aside.
7. Heat 2 tsp of oil in a pan. Add green chilli and ginger. Mix well and saute it for a few seconds on medium flame.
8. Then add the prepared white paneer puree and mix well. Add a little water and mix well.
9. Add salt and 1 & 1/2 tsp of ground dry spices masala. Mix well. Saute it for 1 to 2 minutes on medium flame. Keep stirring occasionally.
10. Then add curd and mix well. Saute it for 1 to 2 minutes on medium flame. Keep stirring occasionally.
11. Now add sauteed paneer and capsicum. Mix well. Saute it for 1 to 2 minutes on medium flame. Keep stirring occasionally.
12. Further, add coriander leaves and mix well. Once done, turn off the flame and take it out to a serving bowl.
13. 'Shahi Paneer In White Gravy - Without Onion Garlic' is ready to be served.
