Awesome! Need to make this! I want to ask you for a take on this technique of baking chicken wings, Harpal. What would be your take on it? Baking chicken wings to come out crispy, without using any extra fat: baking them in the oven, covered in baking powder. (I think, baking powder was invented by the german brand Dr.Oetker, mixing baking soda will all purpose flour. To make it more convinient to bake a cake. (1 letter of it serves 500g of flour.) Now, if you cover i.e. chicken wings in that and bake it in the oven, (maybe @ a 160°C) the baking powder will absorb the fat, rendering out from the chicken skin. And crisp up. Flipped over after some 20min, for the fat to be absorbed on the lowside. Flipped again after another 20min to finish it. The relatively low temperature would allow us to add spices to the baking powder. It doesn't taste anything like flour. It is crispy. Chicken is cooked all the way through. No extra fat needed. Have you ever tried this technique? (Hope you're doing well, too! I felt soooo honoured, when you answered, lately: Yes! We've been texting for a few years, by now.) Ok so you need to first cook the wings then use coating of either corn chips or crisp tortilla powder and coat it with that

@@chefharpalsingh No. I'm using raw wings. 40+ minutes at 160°C will cook them all the way through. This time, I'll serve it with broccoli and an oyster sauce recipe, that I found some years ago. The sauce will also be dipping sauce for the wings: kzbin.info/www/bejne/iGekgpiumZx8Z6s
