Ingredients:
1 cup yellow split pigeon peas (toor dal), washed and soaked for 30 minutes
200 grams paneer, cubed
1 onion, finely chopped
2 tomatoes, finely chopped
2 green chilies, slit lengthwise
1-inch piece ginger, grated or finely chopped
3-4 cloves garlic, minced
1 teaspoon cumin seeds
1 teaspoon turmeric powder
1 teaspoon red chili powder (adjust to taste)
1 teaspoon garam masala powder
Salt to taste
2 tablespoons oil or ghee
Fresh cilantro leaves for garnish
Instructions:
1. Cooking the Dal:
Pressure cook the soaked toor dal with 2 cups of water, turmeric powder, and salt until soft and mushy (about 3-4 whistles). Alternatively, cook in a pot until tender.
2. Preparing the Paneer:
In a separate pan, heat 1 tablespoon of oil or ghee over medium heat. Add the paneer cubes and sauté until lightly golden brown. Remove from the pan and set aside.
3. Tempering:
In the same pan, add the remaining oil or ghee. Add cumin seeds and let them splutter.
Add chopped onions, green chilies, ginger, and garlic. Sauté until onions are translucent.
4. Adding Tomatoes and Spices:
Add chopped tomatoes and cook until they turn soft and oil starts to separate from the masala.
5. Combining Dal and Paneer:
Add the cooked dal to the pan along with red chili powder and garam masala powder. Mix well and let it simmer for 5-10 minutes, adjusting consistency with water as needed.
6. Final Touch:
Add the sautéed paneer cubes and cook for another 2-3 minutes until the flavors blend together.
7. Garnish and Serve:
Garnish with fresh cilantro leaves and serve hot with rice or roti.
