Paneer Ragda Pattice
Servings - 4
INGREDIENTS
Dry white peas - 150 grams
Water - 300 milliliters
Water - 700 milliliters
Salt - 1 teaspoon
Turmeric - 1/4 teaspoon
Oil - 1 tablespoon
Onions - 110 grams
Ginger garlic paste - 1 tablespoon
Turmeric - 1/4 teaspoon
Red chili - 1 teaspoon
Cumin powder - 1 teaspoon
Coriander powder - 1 teaspoon
Salt - 1/2 teaspoon
Jaggery - 1 teaspoon
Tomato puree - 160 grams
Water - 100 milliliters
Green chili - 1 teaspoon
Coriander - 1 tablespoon
Grated paneer - 200 grams
Boiled mashed potatoes - 180 grams
Garlic - 2 teaspoons
Ginger - 1 teaspoon
Green chili - 1 teaspoon
Mint leaves - 1 tablespoon
Cumin powder - 1 teaspoon
Black salt - 1/2 teaspoon
Dry mango powder - 1 teaspoon
Salt - 1/2 teaspoon
Pomegranate powder - 1 teaspoon
All purpose flour - 2 tablespoons
Lemon juice - 1 tablespoon
Oil - 2 tablespoons
Sweet tamarind chutney - 50 grams
Green chutney - 50 grams
Onions - 40 grams
Tomato - 40 grams
Sev - 2 tablespoons
Lemon juice - 1 teaspoon
Mint leaves - for garnishing
PREPARATION
1. In a bowl, add 150 grams dry white peas, 300 milliliters water and soak for overnight.
2. Take a pressure cooker, add soaked peas, 700 milliliters water, 1 teaspoon salt, 1/4 teaspoon turmeric and cover it with lid. Cook until you hear 4 - 5 whistles.
3. Open the lid and stir well. Remove it from heat.
4. Heat 1 tablespoon oil in a heavy skillet, add 110 grams onions, 1 tablespoon ginger garlic paste and cook for 7 - 8 minutes.
5. Add 1/4 teaspoon turmeric, 1 teaspoon red chili, 1 teaspoon cumin powder, 1 teaspoon coriander powder, 1/2 teaspoon salt, 1 teaspoon jaggery and cook for 1 minutes.
6. Add 160 grams tomato puree and cook for 5 minutes.
7. Add 100 milliliters water and cook for 2 minutes.
8. Add boiled peas, 1 teaspoon green chili and cook for 7 - 8 minutes.
9. Add 1 tablespoon coriander and cook for 1 - 2 minutes. Remove it from heat.
10. In a bowl, add 200 grams grated paneer, 180 grams boiled mashed potatoes, 2 teaspoons garlic, 1 teaspoon ginger, 1 teaspoon green chili, 1 tablespoon mint leaves, 1 teaspoon cumin powder, 1/2 teaspoon black salt, 1 teaspoon dry mango powder, 1/2 teaspoon salt, 1 teaspoon Pomegranate powder, 2 tablespoons all purpose flour, 1 tablespoon lemon juice and mix it well.
11. Take some mixture in your hands and shape it into a patty.
12. Heat some oil in a pan, add prepared pattice and cook from both sides. Remove it from heat.
13. In a serving plate, add some prepared ragda, pattice, sweet tamarind chutney, green chutney, onions, tomato, sev, lemon juice and garnish with mint leaves.
14. Serve.
