Of course! I made clean out the fridge muffins today using up banana jam and sour cream and some canned plums and pumpkin. Kids liked them!

Maybe in the future, you could fill one tray without raisins and then stir raisins in the remaining mixture before fillling the second tray. Also, frosting will freeze. You can make a full batch and stick the left over in a container. Just defrost with your cupcakes. It needs a stir, but then it will be perfect for frosting.
