There is something very empowering about making your own pantry mixes and dairy products for sure!
Today we are sharing more Pantry mixes and diy dairy today. Plus we are working on our long term food storage bit by bit.
As always, I am sharing all of my recipes for everyone to try.
Chai multipurpose spice mix
1 cup powder milk
1cup sugar
2 tsp allspice
2 tsp ground cloves
4 tsp ground cinnamon
2 tsp ginger
2 tsp nutmeg
2 tsp cardamom
Mix 2 tsp (or more if desired) in 8 oz hot tea
Aujus mix
4 tbsp powder beef bouillon or 12 cubes
4 tsp onion powder
4 tsp Parsley
1/4 tsp black pepper
1/4 tsp garlic powder
4 tbsp corn starch
Blend in blender until smooth
to use add
4 1/2 tsp mix to 2 cups water
simmer for 10 to 15 minutes until desired
4 1/2 tsp equals 1 packet of aujus mix from store
Chai Banana muffins
2 ripe bananas
2 tsp vanilla
1/2 cup avocado oil
1/3 cup white sugar
1/3 cup brown sugar
1/3 cup milk
1 large egg
1 1/2 tsp baking soda
1 3/4 cups flour
1/2 tsp salt
1/3 cup chai mix
mix wet ingredients well first, then add the dry to the mix.
mix for 30 seconds just until well combined then scoop into 12 muffin cups
cook at 375 for 25 to 30 minutes
cool then enjoy!
Easy chai icing
1 cup powdered sugar
2 tbsp milk
2 tsp chai mix
mix and drizzle over or dunk muffins into
Chai muffin mix in a jar
1 3/4 cup flour
1/2 tsp salt
1/3 cup chai mix
1 1/2 tsp baking soda
1/3 cup brown sugar
1/3 cup white sugar
mix all ingredients together
follow instructions for chai banana muffin mix above
Chai cinnamon rolls
1 1/3 cup warm water
2 tsps yeast
2 tsps honey or brown sugar
1 egg
1 tsp salt
3 to 3 1/2 cups flour
Filling
1/3 cup chai mix
1 cup brown sugar
1 cup softened butter
mix then knead for 5 to 6 minutes until no longer sticky
let rise for 1 hour
punch down and roll out to desired thickness.
mix filling and spread evenly on dough,
roll the dough, then cut into desired pieces,
place on a large greased cast iron or large baking dish and let rise for an hour or until doubled in size.
bake at 400 degrees for 30 minutes.
let cool and enjoy!
top them with your favorite icing
Sour cream
3 cups of heavy whipping cream
around about 3/4 cup of cultured sour cream
heat in double boiler until you reach around 85 degrees
put lid on wrap in towel and let sit in a warm area(around 80 to 100 degrees for 8 to 24 hours until desired tang. put in fridge to thicken for about 3 hours before serving.
Yogurt
1 quart of whole milk
2 tbsp greek yogurt
heat milk to 185 degrees
let cool to 110 to 120 degrees then add yogurt culture, wrap in warm towel.
put in oven or in a warm place for 8 to 12 hours until your desired tartness.(blend/optional) then place in fridge to thicken.

if you have an instant pot....it does all of the work for you, including keeping it at a certain temp for however many hours you want to ferment it for! and when using regular store bought milk.....you have to drain the whey off it with a cheese cloth, but if you buy ultra pasteurized milk, you can skip that step! learning lots of stuff watching your videos!

I have been making Greek yogurt for many years a tip I learned is to keep a 1/2-cup of your made yogurt and freeze so this way you always have a starter. I Mylar bagged white rice with O2 absorbers and into a 6-gallon bucket with lid stored in my cool, dark basement shelf life 30 yrs..I don’t go by any dates on my canned goods, dried goods, freezer goods..if it smells weird, looks weird, taste weird I throw it out. In my experience canned oysters don’t go past the date on the bbd… Any crackers, saltines, ritz, pretzels vacuumed sealed in half gallon jars will not store for more then at least 2-yrs ..I wasted a lot of money ..now maybe had I started using them a year out after vacuum sealing them they might have been ok..a hard lesson learned there…since this I do have recipes to make all of these from scratch. I vacuumed sealed baking chips (chocolate chips, white chocolate chips) I found on clearance 13 yrs ago, I stored in my basement next to the foundation in a totally dark shelf..these were a shocker as they stayed just as fresh as the day I bought them..the chocolate chips do have a whiteish color but if you did a blind taste test you wouldn’t be able to tell the difference between a fresh store bought bag or 13 yr old vacuum sealed..Rotation of food is best of coarse but this is just what I have experienced so far. Flour won’t store or at least for me more then a few years after the bbd..I did Mylar bag w/O2 absorber a few years ago so will check to see how they faired. Learning to make things from scratch is the only way I see us being able to enjoy the foods we like when they become unavailable or to high in price..not to mention the bioengineered foods. I think you would benefit greatly from a channel called Survival HT ..Im going to try her method of using Greek yogurt to make cheese and ricotta along with her sour dough starter that you don’t need to measure or discard and babysit daily ..

Buy bulk spices n herbs!! Frontier and Starwest are two good brands I used to live near a bakers supply shop too. Lots n lots spices n herbs in bulk. And nuts, seeds, extracts, grains…

Try your area for a Amish store the have good prices on the jars and grains. I went too Rockville, Indiana for the closest store around and I bought gallon , 1/2 gallons and 1/2 pint jars too and found extra seal lids for my pickle jars.

Genius paper bag tip! I've got a lot of Danish in me so cardamom is like crack to me. I can sprinkle it on toast, creamy wheat and oatmeal like you'd do cinnamon sugar. I'm loving the chai mix idea and will need to give it a go. Thanks for another great video!

We used to buy pb at Once Again Nut Butter factory in 9# buckets. About a third the size of a 5 gal bucket. Lids were super tight Loved those so much!

When I make yogurt I mix some of the mixture with the yogurt. Then I mix the mixtures together. Always have thick smooth yogurt.

Thank you so much! Flour vacuumed sealed like this can last up to 2 years. For longer storage using Mylar bags will store flour for a lot longer.

This is truly helpful and awesome video. Thanks for making, will use all of your tips in this video including buying half gallon mason jars. To store rice long term in half gallon mason jars please lmk how to seal. Do you have too add oxygen absorbers into the rice? What is your personal way for long term term glass jar storage? I understand about food saver sealing the flour bags but how do you finish the rice? Really appreciate your answer bc I have several large bags of rice I need to get into glass jars but How to seal? It doesn't have to last forever but a few years would be better than where I'm at now..... Love be your channel. Chai tea is somehow on shortage so I do appreciate your chai tea mix so very much!!!!!!!❤

Thank you so much! My personal way is to just vacuum seal with a jar sealer. It will last for about two years without oxygen absorbers, for a longer shelf life (10 years) you’ll need to add some oxygen absorbers to the jar.

Au jus is basically a concentrated version of drippings, whereas gravy is the same thing, only it gets thickened using a roux or another type of thickening agent.
