For the sausage, try raw pack dry method and then when you pop them out brown them* you might like it better than the beef broth all up in the pork and the twice cooked pork patties....OR pre cook the ground sausage or patties and freeze it for cook pork on demand. Pop it out, ready to heat/use!

I’m new to canning. I live in the UK and ordered an All American 915 for an exorbitant amount of money. While I wait for it to be delivered I’ve been enjoying pantry tours by canners and they are inexplicably the best thing on KZbin. I get new information, ideas for recipes, but best of all just seeing all the beautiful jars lined up and ready to go. Cabbage is in the old canning books and squash. If you use distilled water it stays green. I usually just dehydrate it. I also dehydrate my apples.

You might think about putting curtains around your shelves. Light leaches the nutrients out of your canned goods and yours are right out there in the light.

Use cardboard, nonslip shelf liner, layers of newspaper, Dollar Tree cutting mats or 1/4" plywood/paneling to line your shelves. Cushions bottom of jars from the shelf wire. And, you can store your empty jars upside down for easier cleaning when you need to use them. My panty space is limited, so I also use cardboard to separate jars when I double stack them.

In my canning experience, I noticed that refined sugar products don't do well in the pressure canner. I feel like it causes the sugar to caramelize. Even certain high sugar content sweet corn can start to turn color and slightly alter the flavor, if can too long and at higher pressures. I basically only do approved refined sugar products in the hot water canner and very careful of time and pressure in the pressure canner for corn, or anything else known to have much of a sugar content. If metal cans are left on a concrete floor for too long, the ph of the concrete will start to break down the bottom of the cans. The reaction is faster if any moisture is present. Loved your pantry tour!

Your shelves are beautiful! I've often considered getting those metal baking racks but have held off because they just don't have enough shelves. I wish we could get replacement shelves to really utilize the floor space. I'm your newest sub. Excellent work.

Thank you! I do believe you can get more shelves for these, but I like being able to look at the top of my jars to see what they're labeled with. I'm afraid if I added some shelves I would lose that visibility, and the room to be able to grab a jar from the back of the shelf.

Regarding the canned ground beef: I am put off by the mushy texture as well. This year I have discovered dehydrating it instead. Brown it well, drain and rinse I hot water and dehydrate. If I didn’t know it wasn’t “fresh” I don’t think I would have known the difference.

I have found that if you cook your ground meat, put it in a jar and can it without any liquid that it will hold its texture better. It doesn’t boil it; it fries it in the jar.

Love the pantry. Nothing wrong with having the mac and cheese. Love msc and cheese and its easy to make a meal with it when youre in a hurry. Homemade is better yes but in a hurry its very good. The cake mixes good for a quick easy snack.

Fun tour! I love all the colors of your canned goods. I’m interested in learning how to can do cake across your channel. What’s the easier thing to start with? I don’t have an actual canner so would be using pots on the stove or my instantpot.

No canning in instant pot please. You can use any pot big enough to cover your jars by about 2 inches of water. Put a towel or a rack on bottom of pot so jars don't sit directly on heat. My first canning project was strawberry jam. Fruits and jams I think are the easiest. Jams need to be taken slow, follow directions, and should turn out perfect.

Nice pantry!!! You mentioned different jellies and sauces/juices what exactly do you use them for? I am new to canning and want to preserve a variety of things and would love to know how to use the unusual...like dandelion jelly...or pickled onions and peppers. :D Agree with the hamburger different but not bad. Last batch I rinsed before canning, less of a "fat ring".

Cabbage is one of those veggies that it's recommended not be canned, so there are no safe, tested methods for it. So, it's not that it's bad per se, just something on my shelf that I know is rebel canning, like the no soak beans.

I followed the ball recipe for kraut. I believe 5 lbs of cabbage to 3 tablespoons of salt. Mash together and ferment for 6 weeks. I hot pack them.

This was lots of fun to watch, thanks for taking us along on the adventure! I have a pantry similar to this, and my family thinks I'm nuts, LOL. It was nice to see someone else on the same level of crazy, and I do truly mean that as a compliment! I would love to know what your logic is in the way that you store. As somebody who does hundreds of jars every year myself, I store things in a similar kind of fashion but I do not sort by size or necessarily by canning type (WB vs PC). For me, I have it sorted into categories: meats, broths, soups, pickles, salsas, condiments & sauces, veggies, fruits, and sweets (jelly, syrup, etc). This DOES sort of naturally sort them into canning type but not completely as it's just based on categories that seemed to make sense for me. I also plug into those categories things that I tend to use - for instance, I tend to store my spaghetti noodles next to my sauce. Now I only have the one pantry, not an extended pantry (yet), so this will probably change soon! I'm just curious about the logic behind keeping things arranged more by jar size than anything else. it seems to me like it would be harder to keep track of how many things you have, but you obviously find it easier/more efficient and I'm sure with as much as you seem to do per year that you really honed in on this for some reason. Obviously you are very committed to canning and this works well for you, so I would love to know why :-) I always love to get new perspectives, sometimes I learn something amazing and it creates an entire paradigm shift! In the meantime, I'm definitely a new subscriber to your channel!

AuraofBeauty, I used to sort like you regardless of jar size, but as my pantry grew I just found it more pleasing to my eye to have the same size and type of jars together instead of focusing on what's inside. My jars are stored in living space so I'm always looking at them and can easily assess what I have or do not have. Of course if there is a line item in the back of a row I will eventually find it when I empty my shelves to rearrange at the beginning of canning season. It's still a work in progress and always will be as I add and remove items that I continue and discontinue to can. I love your idea of keeping same meal items together. I don't know if I could handle the "chaos" feelings it would elicit since I like a more uniform look, if that makes any sense at all. Lol. Thank you so much for commenting and subscribing to my channel. I hope I continue to put out videos you enjoy. Let me know if you have any requests.

I have a very small walk-in pantry (more of a step-in, lol) so I've gotten stuck storing things together that may not match in look or container, but do in terms of ingredients, only because I don't have very much room to store things. I'm hoping to expand this over the next year or two and create a dedicated canning pantry so my style will change significantly if I make that happen.

If u like cobbler lazy way of making it dump your fruit and then add a box of cake mix and pour melted butter and bake yummy I put canned cherries in a cake pan and chocolate cake mix on top tastes like chocolate covered cherries

As long as they stay sealed they are edible. Nutrients may leach out over time but what's in the jar is still good to eat.

I've never experienced a large quake. I know we've had small ones in WA, but nothing major. I've thought about putting string or wire around for that reason but have never done it. I suppose it will be a live and learn lesson if anything ever does happen.

A bungie cord may work, definitely those black rubber ones. If they are not already, secure the shelves to the walls. WA has the Cascadia subduction zone that I'm hearing quit a bit about lately especially since it may set off the faults in CA.

A bungee cord works great on shelving like this, you just hook it to each one of the vertical supports and run it a few inches above the shelf itself so that it keeps them in place if you ever have an earthquake. :)

I had bought a bunch of fruit ..lots of canned pineapple and after some time they started leaking and some tops were raised. Also, tried making a cake mix over 1 1/2 yrs old it didn't raise. Wonder if there is a way to add something to the cake mixes to make them raise. Might want to watch those fruit cans.

YAY for canning pantry porn! Subbed you as I love canning and cooking channels. Many do not like the texture of the sausage patties and you can use it as sausage gravy; just crumble it up with your fingers and make as usual. Also I have used mine when I needed a half sausage and half ground beef recipe. And home canned jars are just beautiful. I have never gotten the vibrant green from a commercial can of Green beans as I do just looking at my own canned jars! Lovely pantry!

I store my vacant jars upside down with rings on. There are some things I won't even try to can, errrr cabbage is one of them. I'm over regular mouth quart jars and will only can in wide mouth quart jars. I only use wide mouth for canning meats.

@@BonBon-cn1kb You can easily dehydrate your cabbage. It looks beautiful in the jars, taste good right out of the jar and re-hydrates easy. I just cut the heads thin ( not quite shredded) pop them into the dehydrator. I can't remember how long right off hand, but I'm guessing about 8 hrs. I found the video on You Tube.

There are rebel canners who can cream of chicken. Someday I will can the base of cream of chicken without the cream or thickener. I already can cream of mushroom base. It's not quite as user friendly as opening up a can that is ready to use, but it's healthier. 😊

Hey there! Nice pantry shelves and lots if hard work. On the sausage, brown it till crusty before canning and use plain water or chicken broth. When using it, drain well and get it crusty again in the skillet. :)

When you can them it creates a vacuum seal which keeps the lid on super tight. You can even pick the jars up by the lids and they will stay on! Its a good way to tell if your seal has broken too 😊

I have those shelves and I love them. Have you thought about lowering your shelves so that there is less room between them? You could add more shelves and the top shelfs wouldn't be so high. (just an idea not criticizing at all.) Also I've been thinking of securing mine to the wall so I don't pull them over on my self. Am I being silly?

Not silly at all. It's crossed my mind a couple of times as well. I have the front pegs a bit higher than the back for that reason. :) I once thought about adding more shelves but I have multiple items on each shelf and then I wouldn't be able to read the lids.

You could also line them with cardboard to keep the jars from tilting

Hi strain the ground beef. add lard to a fry pan. lightly fry the ground beef. it will "crisp" up as much as you like. canning isn't cooking. canning is food preservation. you can do great things with your canned food. i use this site: www.mealtime.org/meals-and-nutrition/recipes I just substitute industrial canned food for mine have fun

Turn it up side down. Hello from Puerto Rico. If you have quakes, tremors, shakes etc., etc., etc., the glass it is going to hit the hard floor. A bomb, it is going to shake!!!! If you read this I will follow, if not you are upside down in your head. A large rubber band for all those glass is not a bad idea, but put them lower and the rice, flour, you know, lighter stuff high up. I am sorry to bring this up but....... love ya.

Ok total noob here why are some things pressure canned whilst other things are water bathed?

601-Some things are perfectly safe to be water bath canned. Others are NOT safe unless pressure canned. Google ball recipes, they will tell you safe and unsafe things!! Good luck!!!

Sage is a common ingredient in sausage and it gets SUPER bitter when you can it. So maybe try a sausage without sage in it?

Oh my gosh, you are the only other person that I know of that knows of stuffed meatloaf. My Mother only made stuffed meat loaf as do I.

If you are not going to use it give it to a food bank . A family of three will not use all this food in a year . Give it away and put the food that went bad in the trash .

Raw pack chicken is ugly chicken. I canned 60 pounds of raw packed chicken with the bones and it's always delious. I love my home canned meats.
