This is behind the counter at Japan Okonomiyaki restaurant in Tokyo. Today, we’re going to a Tokyo hidden gem family owned, father and son Okonomiyaki Teppanyaki restaurant, called Saya in Sendagaya Tokyo. The restaurant was opened 27 years ago, and Yusuke, the owner’s son, runs the shop these days with plans to carry on the family business in the future. In the morning he first prepares the Osakayaki, an osaka style okonomiyaki which takes about 30 minutes to cook. It’s a popular dish that many customers order so he starts cooking it in advance to minimize customer wait times. Okonomiyaki itself is a Japanese-style pancake. It’s usually made with flour, eggs, yam, cabbage, and any other proteins as one prefers and it’s often flavored with dashi. It’s eaten as a meal or snack in Japan. It appears simple and easy enough to make but even slight differences in how it’s cooked and the ratio of the ingredients used can quickly yield an inconsistent dish. Only a true chef can create a consistent okonomiyaki that their customers can come to enjoy time after time. And hence why each okonomiyaki restaurant is unique in itself.

I just love how you weave the story behind the owner and the staff into these shows in addition to showcase the food and the place itself. Most other Japan food channels almost exclusively showcase the food, but the best part of your video is how you humanize the place and makes it super interesting.

That's almost why I prefer small mom and pop type of places. They are usually smaller so you get to chat with people's a little bit more. I get my morning latte from a lady who runs a coffee stand at a gas station. It's half the price of the same thing at Starbucks and just as good to me. It's nice chatting, and sharing pictures of our animals and stuff like that. Plus getting it from a place like that has other benefits. For example if I forgot to take cash out, since she doesn't do debit, she will still make me a coffee and I will just pay her double the next day.

The Hells Angels, the Comanchero motorcycle club and the Aussie Cartel heads are having talks while you are reading this about their growth in Australia and in Asia. Exterminating The Yakusa presence and their activities in the country would be considerably profitable for the Hells Angels, the Comanchero motorcycle club and the Aussie Cartel. The goal is to initiate their expansion over the Yakusa in Australia and to push it as far as in Japan. According to their plans, they are and will be supported by the Sinaloa Cartel for a part of the gains obtained and it would be done by the end of 2023. They told their mens to prioritize the capture, mostly for torture and interrogation before killing and for selling but to kill right away if they can not capture. This is what members having close ties with Hells Angels chapter leaders are talking about. Some members of the Hells Angels and of the Sinaloa Cartel had already start moving to Australia. The mens had been told to get the job done by any means, even by mass killing if needed. As a culinary student I laughed when they took a nap so relatable. People dont realize how much manual labor there is in the restaurant industry you always feel like a nap coming just by noon lmao

For real. I'm not a culinary student, but I've worked cooking in multiple different restaurants. I've also done a couple of other types of labor, but nothing has made me as tired as working in the restaurant industry. I fully believe it takes a special type of person that can work in one for a month and then decide "Yeah this is awesome I wanna keep doing it!"

Its interesting how the son's owner casually mentions about their previous staff/s starting their own businesses after they learned from the restaurant. No sign of competitions or anything which i think attracts more positive vibes for the restaurant. Good job! I'd like to visit your shop in the future 😊

In Japan its quite common for shop owners to take in apprentices to learn their craft and then open up their own business... I find it really beautiful. It shows that they treat their employees like a real human being and not simply a worker to bring only profit to them.

i heard its a pretty common thing in Japan. Like it's more of a reputable thing, if your employees leave to open up a successful business. I guess it means the owner and restaurant, were doing a really good job, and the worker picked up a lot of good skills.

@@Aeybiseediy You believe in a business only one side benefits? The business is offering a job, they pay you, and in exchange you provide your labor. A business owner has liability and responsibilities that an employee does not have. Nothing one sided about that. Also, while a business can exist without employees, for example, a small business owner doing landscaping, you can't have jobs without a business creating one in its expansion.

Love this. The owner father walks out for 1 second and immediately screams strong artistic vibe. Must be a great business owner as well. The son should have no problem getting a girlfriend with his face and smile. The lunch looks great also. Makes me really want to try the VIP dinner.

Japanese people are so polite. I worked for a Japanese company years ago, and everything at the company was 1st class. The CEO would talk to you like he was your friend.

I think I know why I feel so good watching these videos. It's because of small things hidden between the lines such as: a business passed down from father to son, boss arriving first and working harder than the staff, everyone nice with each other, a lot of discipline and care with the work, the treatment of the customers. This is what a society that hasn't fallen apart culturally looks like. I feel like I've been robbed for not having that around me, I want to sue the boomers and the gen x for ruining things before I arrived

Man, this restaurant is so chill. Although I know that’s not the case when it comes to actual work, it still feels so relaxed and controlled because of its small size and limited menu. I wish to own a restaurant similar to this someday. Homey ambience, chill vibes, yet still successful.

I love your videos, Paolo, so I watched this one as I usually do. But then, I felt strange because I was looking at the dad and son, and their employees and I was like: « Did I just enter a manga fantasy or something?! Everyone of them is so handsome, seem nice, are dressed impeccably and genuinely seem to love and be good at their job. » This was a surprisingly hot episode. Lol. Yet, still super interesting. I love how you focus on both human and work, not just work, making your videos entertaining. Nobody can deny the amount of hard work involved in every single episode. Thank you so much for sharing!

Teppanyaki chef def. is one of the most rewarding restaurant jobs. Customers don't expect to get food as fast as possible, the entire process is part of the experience

Yousuke is pretty good looking. I was surprised when he said he was single. I thought for sure someone would have picked that handsome man up. I would love to visit their shop one day. The food looked amazing. I have never gone to a place like this, but I would for sure stop in and have a bite there. Loved the video Paolo. Both shops looked amazing. Hopefully one day I'll drop by and try it.

Hi @@missplainjane3905 1) Yes 2) Rich in culture. I'd give that a 10. So is the technology (10). Architecture is not so sophisticated but simple and elegant, and unique in specific ways - (9) Food is definitely a 10 Local products are questionable- They make all the high-tech machinery, and equipment yet nowadays their crafts etc. are mostly made outside Japan. I don't like that personally. Stereotypically we expect them to make their stuff in Japan with the label "Made in Japan" while maintaining the quality they used to have. I'd give that a 7 for that reason. Scenery/landscape is a 9. The Standard of living is @ 9 outside the capital city(ies) but about 7-8 in the cities. Overall the quality of life is quite excellent (9). 3) Polite, Busy and hospitable. 4) Rich, Techy, & vivid

@@missplainjane3905 well you got your priorities right. Go enjoy the beautiful country. Don't stay in Tokyo alone, go to the countryside. Take part in their cultural festivals at night. One thing, their summer can be quite hot if you are not used to hot weather. I miss Asakusa and Nagasaki.

Paolo! This was such a great one. Good timing too- I just made Hiroshima okonomiyaki for family.... think it turned out OK but gonna leave it to the professionals from now on! I would definitely hit this restaurant up... if and when Japan opens more.

And this is the way it should be everywhere. Work together so everyone becomes successful and train your workers so they can go out and open their own business. And stop taking things so seriously. So many places where I've worked it was like they treated staff like the enemy. Rather than split the work between staff, it becomes a competition to see who can hinder the workers the most.

I have only recently been introduced to Japanese food when a friend took me to a Sushi train. One of my favourite foods was okonomiyaki . I recommend it to everyone
