"Papabubble" How to make a fantastic character candy

It is a state of the demonstration of the pub blur that has been performed only in a few places in Japan.

A number of people asked why they're poking the rolled candy with scissors. They said it's to keep the candy solid when it's cut. I'm guessing it's like having lines in poured concrete or scratching glass with a dedicated cutting tool, they're giving the candy predetermined spots to break rather than allowing the candy to potentially shatter into irregular fragments and powder.

Why do they always pour the mixture to a small work surface and then expand it later? What happens if they pour it to an already wide work surface?

It would cool too quickly. That table is heated with water to control how quickly it cools down the sugar so they have time to mix in the flavoring and colors.
