The cowboy hat is a high-crowned, wide-brimmed hat best known as the defining piece of attire for the North American cowboy. Influenced by 19th century Mexican culture, today it is worn by many people, and is particularly associated with ranch workers in the western and southern United States, western Canada and northern Mexico, with country-western singers and ranchero singers in Mexico, and for participants in the North American rodeo circuit. It is recognized around the world as part of Old West lore. The shape of a cowboy hat's crown and brim are often modified by the wearer for fashion and to protect against weather.

What size is the paper

He doesn’t specify and it pisses me off, I’m assuming the size of traditional origami paper, so if you buy a pack of origami paper, around that size!

Just square paper, larger for a human sized one or smaller for smaller things

You can use regular notebook paper and just cut it to be square

Besides, it's not like the first one you fold is gonna be perfect. You are probably best experimenting with a few different sizes. It sounds like you want a solution you can market instead of simply learning how to fold it. Once you have an idea, you can size your paper for your project. For me it's pet rocks for the kids, so small is fine.
