Peppers for the winter - a salad in a jar with an irresistible taste!
The smell of roasted peppers reminds me of winter food, which I love to prepare and I always look forward to that period. Every year I experiment with some new recipes, but I don't change the old ones - proven ones. This is one of those recipes that is lovingly prepared again and again every year.
● INGREDIENTS ●
3 kg of paprika
1 head of garlic
Half a bunch of parsley
2 tablespoons of salt
200 ml of vinegar
80 ml of oil
I got 4 jars from this quantity.
Roast fresh peppers in the oven, on the grill, on the stove or on a plate. Cover it and leave it to cool, then peel it, clean it from the stems and seeds and chop it into small cubes or strips.
Peel the garlic, chop it finely and add it to the bowl with the chopped pepper. Add the chopped parsley and the rest of the ingredients. Mix and pour into clean jars. Close the jars with disinfected clean lids and place them in a pot covered with a cotton cloth. Pour lukewarm water, enough so that the jars stick out about 2 fingers. Then put it on the stove and turn on the temperature to medium, if necessary, reduce it even further. The water should flow and not boil. Cook for about half an hour to forty minutes on low heat and then remove from the stove.
After that, leave the jars to cool in that water, wipe them and store them in a cool and dark place.

Roasted pepper for the winter
Roasted pepper for the winter is one of my favorite salads. It is very easy to make, it does not take much time and it is healthy because there are no preservatives and it is pasteurized. You can make it even if you live in an apartment and you will enjoy its taste during the winter.
● INGREDIENTS ●
5 kg of paprika
2 liters of water
400 ml of vinegar
4 level tablespoons of salt
1 head of garlic
Parsley
a little peppercorns to taste
Wash the peppers, remove the stems and remove the seeds, then arrange them on a baking sheet lined with baking paper. Put the pepper in the preheated oven that you turned on to 200 C, then increase the temperature to 250 C. It will be enough to bake the pepper for about 5-10 minutes because it needs to be, as the name says, "sliced."
Leave the pepper to rest for a while and soften, and prepare the liquid for that time. Add water and other ingredients to a bowl and mix. Chop the garlic and a bunch of parsley and put them in a jar together with the paprika, then pour the prepared liquid over it. You can also add a little peppercorns to taste.
Close the jar tightly and put it in the oven, turn the oven on to 100 C and leave the pepper for about half an hour to pasteurize. After that, turn off the oven and let the jar cool completely. After that, store it in a cool place.
