If you used a larger die accidentally can I change to the smaller die and recrimp? Obviously going too small would render it unsafe.

Have you ever accidentally used too large of a die. I was supposed to use a yellow die and used a blue. I would imagine going down to the right size would be OK whereas going to small would be unsafe
