I actually thought of a reason for the slow trip: travel arrangements were made in advance to drive the train very slowly so that the food wouldn't collapse. Imagine if you put all that work into a cake or something like that, only for it to be ruined by a sharp turn. It'd be almost as bad as having it ruined because *some* ponies can't resist stuffing their face. Not that any members of the Mane Six would do something like that, right?

One nitpick that I really hate to bring up, the pony shoveling coal into the firebox is *NOT* the conductor. The conductor never works in the cab, the conductor's job is to punch tickets, and give the engineer the order to highball. The proper crewmember term would be firepony (the pony equivalent of the fireman). As for the last sin, you can easily handwave it with the explanation that the regular route to Canterlot was under repair, and the train was forced to take a detour that delayed it.

Milokot A train ride is never easy going. When Railway workers lay down rails it's not just one long rail it's a series of conjoined rails because they have to consider elevation and when the track has to be turned. So the result is a bumpy ride until you reach your destination. If anything scaling up the mountainside to Canterlot should have rattled the train severely causing the pastries and other designs to be completely destroyed.

Pinkie's description of the food is completely wrong, too. Marzipan is basically almond flavored fondant, which is not "Rich or Creamy." Mascarpone is a bit like cream cheese, but less creamy and definitely not "Tart and Tangy." Also, I think everyone knows that meringue is CRUNCHY, not smooth or silky. Edit: Just found out that Marzipan can also be a "Confection consisting primarily of sugar or honey and almond meal, sometimes augmented with almond oil or extract."

If the trip from Ponyville to Canterlot was an overnight trip, you most likely wouldn't be able to see it from the the town. Oklahoma to Colorado is an overnight trip with one stop. Going off of how you can't see Colorado from Oklahoma and how that's an overnight trip, those Ponyville trains sure are slow.
