They beat the parotta after cooking to make it fluffy and soft.. If u dont do tht it's just crispy and won't absorb as much gravy as it shud..

LoL, I understand you find it odd..why would he hit it & breaks it with his hands after roasting it, it looks clean and roasted in oil? The thing is parotta is somewhat hard to chew and breaking it like that (like threaded loops) makes it easier to tear and eat and also absorbs the "kuruma" or "serva" or "salna"(side dishes) more. This also makes it easier for the stomach to digest. And that is why the whole process instead of just flat pressing it.
