This is an unrelated question but I would love your input on it. Can we monitor and report configuration changes in GPO through SCOM (or any other SCCM application)?

I am afraid you might have to use a third party tool for reporting mechanism. You can enable auditing on GPO and other components involved, but you have to sift through the event logs to gather info.

Just replicate what I did in Hyper-V configuration. Instead of Hyper-V internal virtual switch, you can create internal network adapter to create your lab environment on VirtualBox.
