I always recommend clicking to grab and then jumping almost immediately after clicking. If you time it right, you can dodge almost every weapon not including the packed ice. There is an even more effective method where you land on their head at the end of the grab. The timing is much harder.

The chain does less damage then the bat the chain does 9 dmg per hit while the bat does 10.

Forgot, but spear has a small hitbox. The knife is the hitbox. So to dodge it, just get really close or flank them from the sides
