Sir in last example chart ,after going retro ,would we consider Jupiter getting aspect from Venus and Moon both or only Venus or only Moon ( since both Venus and Moon are in exchange)?

Only moon would aspect Retro Jupiter after mid life. And anyways Venus is making combinations with natal Jupiter after midlife.
