As an Italian (50%, non-obese), ravioli is meant to be prepared fresh. It is not really fair to judge it based on store bought. Someone’s mum or grandmother can make it for you proper. Papardelle is wide tagliatelle. Try using it instead of spaghetti with “bolognese” sauce. But make sure to heat the cooked pasta in a pan with the sauce, don’t just spoon sauce on top of plain pasta like a heathen. It won’t stick to the noodles. Manicotti is actually called cannelloni in Italy. The tubes are filled with a ricotta mixture and baked. If you enjoy lasagna, you will enjoy manicotti/cannelloni. Try it at a casual italian restaurant. Orecchiette is a very under appreciated pasta shape. It means “little ears.” As a musician, you are correct to love it.

Growing up in a non-Italian family, pasta consisted of spaghetti or elbow macaroni. This was before "Kraft Dinner" even existed. Cheese was that damned orange cheddar and spaghetti sauce came from a can. The only other cheese used was pre-grated and dessicated "parmesan" (not parmagiano ) from a cardboard shaker. I did try Kraft Dinner once... wayyy the hell too salty and the orange color was scary!

I'm 1/4 Italian myself and have to say that for the most part, I love your tier list. Only an Irish person with a bit of the aul Italian blood goin through them can truly appreciate the wonder of the Italian cuisine that is the gnocchi, so I'm delighted it got S tier. Also, I agree that the shells dont work great for a bolognese or a simple tomato sauce, but their pretty good in a more chunky ragu or pasta fagioli ( which is a fave of mine). Also, I'd like to give a shout out to the king of the tube pastas, cannelloni. Love your work, keep it up 😊

Garron. You started your analytical session with a very expertly methodology and felt fair and balanced. However I feel as we moved through the exercise it feels you were getting hurried and some of the earlier analysis reasoning was being bypassed and quintessentially reducing the effectiveness of this important exercise . Hopefully you can revisit this topic in the future and give it the credence needed .

Hello, I’m a Midwestern American in a similar weight class to yourself. We call them bow ties, wagon wheels, and spirals (you know which ones), and they are my S tier selections. Interesting shapes/textures and great sauce traps. And I completely disagree with your bow ties take. The uneven cooking gives them a spectrum of texture that gives a more unique and memorable mouth experience. And you need to stab them in the middle with a fork, my friend. Additionally, in America we have the shitty boxed mac & cheese that comes in ridiculous shapes like Sponge Bob or Frozen characters. And those are the absolute best for soaking up the maximum powdered “cheese” mixture. It’s the stuff of nightmares for any Italian grandma. But it’s my ultimate comfort food. Great channel. Thanks!

Highly entertaining video! I admit to being very slightly disappointed there was no mention of strozzapreti ('strotsa-pray-tee' = 'priest-stranglers') quite popular in central Italy. Though I can see how they would slip under the radar of anyone less than 75 percent Italian.

New subscriber here ( U.S.A. ) , 50% Italian and 25% Irish . I must rebut your accusations against " bowtie " macaroni . ( we don't call any of it " pasta " ) . Bowtie is the best for dishes that require aggressive mixing . You can't break it into pieces no matter what you do to it ! ( try that with Ziti or Penne ) . Absolutely bulletproof with olive oil , garlic and broccoli.

@jeramy576 I must admit to being too Franco Italian for that type of sandwich. But it is a genius video kudos to the Irish times for spotlighting him. I love the bread, but I hate buttering bread with ham . I'd have to have mustard and I'd want spinach not lettuce beefsteak tomatoes cucumbers pesto and aged cheddar with bits of rosemary in it. I've never seen cheddar with rosemary bits in it on any of the grocery shopping errands I've done while in Ireland. Do they not have enough rosemary to spare to put into cheddar or do irish people dislike the combo of rosemary and cheddar? Or have i gone to the wrong shops?

imo manicotti is nice to eat when stuffed with ricotta and covered in marinara and cheese. But it is not pleasant to work with bc it has to be cooked before being stuffed this way, which often causes it to stick together, and the long tube shape makes it difficult to fill without ripping. Much easier to simply shove a mozzarella string cheese into each one, smother in sauce and cheese, and bake.... from my experience this is the only way to avoid being triggered by attempting to stuff otherwise. x') There's my unsolicited manicotti rant. x') I did enjoy your video. :D Also, gnocchi is pronounced "no-key". Have a nice day :D

Garron, how do you not know about stuffed shells? You partially cook your shells in boiling water, stuff them with herbed ricotta, and bake them in sauce, covered with shredded parmesan. They're right up there with lasagna!
