Peas and pancetta pasta, an easy and delicious recipe!

INGREDIENTS FOR 4 PEOPLE
300 g of short pasta
220 g of frozen peas
180 g of diced smoked bacon
1 piece of onion
Salt up to taste
black pepper
3-4 tablespoons of extra virgin olive oil
½ glass of white wine
1. Put a saucepan with water on the stove and bring the water to a boil
2. In the meantime, put the oil in a high pan (the same in which you will cook the pasta), let it heat up, then add the pancetta and brown it for 2 minutes.
3. After 2 minutes, add the white wine over high heat and let it evaporate
4. When the bacon is golden brown, remove it with a perforated utensil so that the cooking juices remain in the pan
5. Now add the onion and brown it slightly, then add the peas, season with salt, pepper and cook for a few minutes.
6. At this point, put the boiling water and cook for about 30 minutes without covering
7. After 30 minutes add the pasta and if necessary add boiling water until the pasta is almost ready
8. 1 minute before the pasta is cooked, turn off the heat and let it rest for 2-3 minutes, stirring often
9. If you have the opportunity, pass the bacon for 30-40 seconds in the microwave to make it crisp again and then put it in the dough, stir, add pepper and serve!
