What would the Suppli be called if you put the meat mixture inside wilted cabbage and then baked? Hint for wilting cabbage, freeze it hard then thaw it completely. It keeps the nice green color and fresher flavor.

I have to say, that I love to watch your videos. I am second generation 'Italian', northern and Sicilian. I watched my grandma cook lots of foods but was too young to comprehend my heritage at that age. Now at 75 yrs old I saw how focaccia was made and that's exactly as my grandma made it. Now I can make it for me and my family in honor of her. Too many traditions lost over the years. Now, I can start getting them back. Thanks for sharing your life. It's important to me to fill cultural voids that were created over my lifetime. Thanks again, you both are appreciated.

hey you guys! Me and my family were driving back home through Basilicata and decided to take a quick detour to get to the location you advertised where to get Caciocavallo Podolico and they had it! And although a bit pricey, it was so worth it. My mum was a bit skeptical but even she agreed that it was worth the money and the detour. Plus, the location was so pretty. We even met with Alessandro, the shepard and cheesemaker you met with, he was really nice and soooo tall lmao), he was kind enough to show us the room where they store the cheese. Thank you for telling us about that place, we'll certainly be going back.

I actually came up with the idea of using bolognese to make a sloppy joe type sandwich on my own a couple months ago. I called it the Sloppy Boe 😂. I had no idea it was an actual dish in Italy. It also makes a killer grilled cheese. I use a nice sliced sourdough or Italian bread with provolone and mozzarella and grill it up in olive oil and it is divine!

You could have your leftover ragu on a baked potato topped with lots and lots and lots of parmeggiano…. 😋 I actually made a ragu yesterday and made a ‘Not lasagne but lasagne inspired’ oven dish with aubergine and a creamy cheesey white sauce. And it turned out delicious😊

Wow, what great ideas and I am so inspired to make that focaccia bolognese- it looks amazing! When I make our bolognese sauce ( following Eva’s recipe), I always make a big pot and then portion it out to keep in our freezer for those days we don’t feel like cooking and want a good quick dinner. Harper, the hamburger is named after Hamburg Germany where the Hamburg party was invented. It was brought to the US by German immigrants. Later it was popular to put it between bread for portability and the American hamburger was born.

I use my family's traditional "bolognese" sauce in a way I'm sure everyone would love that you might not have tried: I put some provolone and or mozzarella cheese in a small non-stick frying pan to melt it, add a bit of grated cheese, then a couple of table spoons of the ragu over the melted cheese, and then a couple of slightly scrambled eggs...cover until cooked...then turn the pan upside down over onto a couple of pieces of crisp toasted garlic bread...it has become my favorite meal ...as if breakfast could get any better.

This reminds me of the pizza we got in Rhode Island at every Cumberland Farms when I was a teenager. Thick crust, sauce (minus the meat) and a sprinkle of parmesan. It was sliced in rectangles and you ate it room temperature.

Hamburgers are named after the German city of Hamburg, where servants would get the leftovers of their masters’ Sunday roast and eat it on a bun. When said servants migrated to the US in search of a less servant-y life, someone adapted the idea and started selling them as street food in NYC. The type of meat and bread used changed significantly in the process. Greetings from… Hamburg 😅 Where the typical local food now is mostly fish (fried or pickled) and a type of flattened cinnamon roll/croissant hybrid we call French roll 😂

Don't be knocking the Sloppy Joe. My mom made them from scratch. They were excellent. She would also make it with left over roast that she cooked until it fell apart. Proper Sloppy Joe is excellent. I'm sure the Bolognese version is excellent.

I use the left over ragù to make “veggie” lasagna. Slice zucchini and eggplant with mandolin in 2,5 mm thick (1/10”) slices. Coat lightly with olive oil and bake the slices batch wise in a grillpan on medium heat. They should get dry and have some nice grill marks. Take them out and put on kitchen towel. Grade provolone cheese. Layer like lasagna with grade provolone. Important is to use not to much sauce between the layers. Finish with bechamel sauce some nutmeg and cheese. Bake in oven like regular lasagna. The grilled slices will soak up the moisture of the sauce and you will end up having a firm lasagna. Have a nice Negroamaro or Primitivo wine to go with it. Zinfandel will do fine to.

I make homemade Sloppy Joe’s every few months. My Mom’s recipe might be from Campbell’s because it includes a can of Campbell’s condensed tomato soup…plus ground beef, some tomato sauce, onions, several dashes of hot sauce (Tobasco in her recipe) and an optional dash or two of celery salt.

I've made Bolognese sloppy joes many times, and I have found a way to improve on it: Instead of a chili dog, a Bolognese dog. It may sound strange, but it is absolutely delicious! Better than a hot dog, better than a sloppy joe. One plus one equals ten!

The focaccia alla Bolognese is very similar to Rhode Island's Bakery Pizza. See D. Palmieri's in Johnston RI, and DePetrillo's in North Providence RI. It's basically a focaccia with tomato sauce on top. The difference, of course is the Bolognese. It's served at room temperature. I agree it's not pizza, but it has its own charm.

Please try homemade sloppy Joe's! We make them all the time, and they're super easy. My version is frying up the beef, draining the fat, and adding ketchup (at least 1/2 cup but more depending on how saucy you like it), no more than a capful of red wine vinegar (I prefer about half a capful per 1 lb of beef), soy sauce (I measure with eyes, about two tablespoons?), and brown sugar to taste. Obviously salt and pepper to taste as well. Sometimes I add Japanese mustard powder because I don't like regular mustard, but it's optional either way. Never tried Dijon mustard, but that's probably fine. Some people like onions or green peppers sautéed really soft with the beef, but I prefer the basic version. I prefer soy sauce and red wine vinegar, but I only started doing that because we didn't have Worcestershire and soy sauce+vinegar is a substitute.
