Patatas bravas, a beloved Spanish dish, consists of white potatoes cut into irregular cubes, fried until crispy, and served with a spicy tomato sauce and sometimes aioli. The dish is commonly found in tapas bars across Spain and is known for its bold flavors. The spicy sauce, typically made from tomatoes, garlic, Spanish paprika, and red chili peppers, gives the dish its characteristic bravura, meaning "fierce" in Spanish. This popular snack is often enjoyed with a cold drink and shared among friends, making it a social and flavorful experience.
Today, I’m using the Air Fryer to cook the potatoes.
NOTE: Aioli and mayonnaise are similar; emulsions are primarily made from oil and egg yolk. The key differences lie mainly in their flavor profiles and traditional ingredients.
Aioli traditionally includes garlic, which gives it a distinctive taste. Mayonnaise is typically made with just the essential ingredients (oil, egg yolk, and an acid like lemon juice or vinegar) and has a milder flavor. Sometimes, mustard is added to mayonnaise for flavor and to help stabilize the emulsion.
Aioli is commonly made with olive oil, imparting a more robust, distinct flavor. Mayonnaise is usually made with a lighter, neutral oil like canola or vegetable oil, which doesn’t overpower the other flavors in a dish.
Add a little garlic to the mayo and a splash of olive oil for a quick Aioli.

For the potatoes
1 kg (about 2.2 lbs) potatoes, peeled and cut into cubes
Olive oil
Salt to taste
For the bravas sauce
2 tablespoons olive oil
1 onion, finely chopped
2 cloves garlic, minced
1 teaspoon smoked paprika
1/4 teaspoon cayenne pepper (adjust according to spice preference)
400 grams (14 oz) of canned chopped tomatoes
1 tablespoon tomato paste
1 teaspoon sugar
Salt and pepper to taste
For the aioli (optional) - See NOTE in the description above
1/2 cup mayonnaise
1 clove garlic, minced
1 tablespoon lemon juice (optional)
Salt to taste
oven to 400°F (200°C) - 20 mins - 420°F (210°C) 20 mins
Air fryer 380°F (190°C) - 20 mins - 400°F (200°C) 20 mins
