tomatillo is from the gooseberry family unlike raw tomatoes hence the sour taste. for vegetarians, black beans, zucchini, mushrooms, and tofu/tempeh give better Mexican flavors vs potato/paneer. Even row jack fruit is great in authentic steen-style tacos.
