To stop the flatulation that the peas cause. Just add a teaspoon or half teaspoon of baking soda. It will reduce the gas in the peas. It works (per my mother's recipe).

I was born in Texas and my mother and father moved to California in 1957. Some of my mother’s family are still in Texas. The tradition of black eyed peas for New Year’s day continues with my family and grand kids for ever. Add ham and cornbread and greens and yams then pecan pie. Happy New Year People ! Cheers to back to some kind of normal in 2021 !

From southern GA, we were taught collard greens = cash, black eyed peas = coins and you eat both on Jan 1 to ensure prosperity in the New Year.

Momma was from Kentucky, Momma would only go around the coffee table one way. She said it was bad luck to go around the other way. She also would not walk over a broom’s handle. Lord honey if black eye pea bring good luck give me a bucket full.

That day I would love to tell you thank You and thank you have kept me for just being alone I’ve been ill Off and on for a while, I guess the last couple of years, and watching you I remember that you have reminded me of the things that I use to cook or things that my Mother use to cook. I was going to ask you if you have ever made or have eaten a Earthquake cake they are good and rich, when I first had them a friend of mine made it for my Mother’s Birthday because she knew that she would get a traditional Birthday cake But the earthquake cake would be different, but then they were called a Neiman Marcus Cake, and when I went to look for the recipe another friend of mine said that it sounded like a earthquake cake and when I looked at the recipe I said that it. I used to work at Cracker Barrel. On New Years Day, No matter what the customer ordered- even if it was breakfast food- it always came with a side of black eyed peas for good luck. That was the first I’d ever heard about this tradition.

Paula…You are so right…I’m a widow, and due to vision issues, no longer drive… in 2020, I really was isolated… churches were closed, I never got ti be with family, or anyine else… It was awful. I wish I had known about your channel…It would have hel My sister, who is 12 years younger. Than I, recommend your channel to me. I still live alone, and don’t get out much, due to not driving. ‘I want you to know that your videos have been an inspiration to me. I’ve begun cooking again…cooking fir judt ine is hard. Thank you so much for so graciously sharing your vast knowledge of cooing good food with us. And… I love seeing your sweet dogs. I have two dogs…My 16 plus little white Chihuahua is having surgery Tuesday, February 7th to repair a very painful fistula in his tiny mouthmt hat opens into his little pug nose. At least one person has said that I should put Finny down…because he is so old….You can just imagine my response. Thanks again, for all you do… Sandy, from Cinnati❤❤❤

A few years ago on NYE, I was septic and my organs tried to shut down. My husband is from the south, and he FORCED and fought me and got some black eyed peas down my throat. I don't know if it was the peas, but I made it 😂 I recovered!

Every year I cook black eyed peas with ham hock and cabbage. I don't know if it brings luck and prosperity or not, but I'm afraid to go A Year Without It 😂.

Oh Paula, thank you for thinking of people and what they have been through, and especially mentioning those living alone through this virus nightmare. I'm 65 and live alone and it is living hell. My kids and grandkids come for a backyard visit now and then but it's so cold it's just not really possible now, and it's just not the same anyway. Some days I feel like I'm gonna go crazy being in this house alone ALL the time. My two little dogs are my life savers. Only one son was able to come and spend the night with me and share Christmas day because he works from home and is totally isolating. My other kids and my grandkids came to visit on Christmas Eve day to exchange gifts but it was so cold we were all freezing outside so it had to be a short visit. I hope you have a wonderful New Year Paula, out with 2020 FOREVER!!!

@@billiegoodman4872 I understand believe me. My own sister who was a nurse for over 40 years had the attitude of well, whatever will be will be. She still had her housekeeper come over, went to visit friends and neighbors, had her kids over, etc. Now several of her friends have the virus and some are dying, and some are left with horrible after effects. I kept telling her to stop and think about how irresponsible she was being but NOOOO! Many people have the mentality that if they test negative before they see someone that it's all ok. Well, many of her friends tested negative one day and then positive literally the next day. In fact, she and her husband were going to go visit another couple before Christmas day because the couple said they tested negative. Well, two days later that couple called my sister and said they weren't feeling well, and low and behold, they tested positive and are now very, very, sick, they're in their early 70's. NOW she's taking it seriously and being totally cautious because that was too close for comfort. She finally listened to me and didn't have her daughter's family over for Christmas. MY kids refuse to come in my house, only one is able to because he works from home and totally isolates for weeks at a time. The others are like "no way will I carry the guilt of infecting you mom because we can't totally isolate and it's too risky.' So we meet out in my backyard which is big and sit apart from each other when we visit, which has only been about 4 times since March. It was hard being without all my kids and grandkids on Christmas day but I also couldn't carry the guilt of passing something on to someone either. So for us it's simply, I love you too much to risk it, so we don't. And I won't risk other peoples lives either so when I do go out only for groceries or gas, I wear a good mask, go when there's the least people, or do a pick up for groceries. It's so frustrating that people just don't get it. Like I say, I want to be here when it's all over, and I won't be if I have people in my home, so, it's me and my two dogs. My kids are doing the same, they are having NO ONE into their homes and they're not going into anyone elses homes, and they're NOT letting their kids be around other kids, and thankfully the schools are closed. Like my daughter says, "I'll continue home schooling until this passes, I love my kids too much to let them back in school and risk their lives or have them bring it home and ruin our family life." And they're doing fine now after adjusting to it all. We all Facetime and do outside visits. One day at a time. Take care and try to have, shall we say, a better New Year.

Yes, growing up in Texas we always have black eyed peas on New Year's Day. I remember my mother using salt pork because these peas need that flavor. As I grew up I followed the southern tradition and I make them every year too. I add chicken broth of some form to make lots of liquid to be soaked up by the cornbread we serve with our black eyed peas. Yep we'll be making a double batch this year because we need all the luck we can get. Wouldn't it be funny if black eyed peas ended up being the cure for coronavirus! Hey, I'm not taking any chances. I may start eating mine early next week. Good luck to us all!

It's interesting how our parents and grandparents told us we couldn't do certain things. But they never told us why we were forbidden to do certain things. All they told us was they were bad luck.

Hi Paula, I live outside the states which I do not have a pressure cooker, believe you me I’d love one. To make the black eyed peas would a slow cooker work ok? I’m from NH but lived in Virginia but now live in Thailand, but I do like the black eyed peas. I was out of town last year on New Year’s Day, and I’m very superstitious as well. I didn’t make black eyed peas and now I’ve just realized why I had an interesting year! I’ve already bought my black eyed peas and ham shanks for this year so I’m ready!!! Cheers!

This is a really good recipe but I always add half a teaspoon of Tony Checheres' Creole Seasoning to include green pepper, red pepper, garlic and other spices that really jazz it up.

Could your engineer put a new button on your pressure cooker? Fix the new button so, it can be pressed and lock in place and release the steam on its own. Then, when steam released just repress and release the button to start position.

I learned you should never have chicken on New Years. A chicken scratches backward and you don't want to move backward in the coming year. Instead, you should eat pork because it roots forward.

I'm so excited! I got your new cookbook Southern Baking for Christmas! It is one of the most beautiful cookbooks I've ever seen. Love the pictures with every recipe. It also seems to be authentically autographed! I called the Paula Deen store where it was purchased and the lady had no idea if it was real or not. She said they are all this way so may be printed from factory. Ugh! I'm dying to know if it's real!

No peas this New Year😟. I can almost smell them! The greens, smoked ham, cornbread or fresh baked rolls and creamery butter are missed from our table. While it may not be good for blood pressure it blesses us with wonderful memories of the heart!

South Carolina here! We have to have our black eye peas and rice with hog jowl, collards and cabbage with the jowl, fried fish and cornbread, and a man has to be the first person to walk in the front door with money in his pockets! And don’t forget the peach cobbler!

Oh Ms Paula, I never liked black eyed peas when I was little. I couldn't stand the taste. Over the years, I have grown to tolerate them enough to eat them just this once a year. Lol. But, I would've loved for you to cook yours for at least an additional 20-30 minutes so they could be nice, thick and creamy and serve it with some of your cornbread.

Hi Paula I’m a Texas woman born on New Years Day also,here in Texas we always have black eyed peas on January 1st for good luck in the New Year..Love watching your videos, have learned recipes I can’t wait to try especially your tomato pie and your recipe for your Georgia Cracker Salad, thank you for sharing.

Paula when you're cooking with dried beans or peas have you ever tried making your broth for them to soak in overnight as they get tender? I've done that and it makes tastes really good because they're soaking up that broth chicken soup as they plump up some.

I fry the hog jowl after I cut it into strips or I cook it like that in a 400 degree oven.... love it. We called it eating high off the hog...greens for just great eats and money. Peas for luck praying you can pass that gas.

Well I'm from Moreland, GA and New Year's Day is my FAVORITE holiday. The food is wonderful! Black eyed peas, collard greens, cracklin cornbread, sweet potatoes, stewed tomatoes, and some type of pork as the meat. Honestly, the meat is anticlimactic though.

Yep, my mother and father always had black eyed peas and collard greens on new years day. She would also make creamed potatoes and cornbread with ice tea to go with it.

I add onions skin and all to stock when I make it homemade. The skins flavor and good color.

That's exactly how they teach in Culinary Institute. Everything gets used, and there is no waste. Onion skins, carrot peelings, celery ends, parsley stems etc., all went into the stock pot. Of course, all were washed and clean.

My mom would have us eat tuna on New Year's because they swim forward. She was from Pittsburgh, I have lived in the south many years but maybe tuna is a northern thing?

Be sure you save the other piece of hog jowl to season up your greens. Oh, the jowl is from the cheek and the hocks are a joint.

Several years ago I made beps from dry. Oh my goodness, never again will I fix them any other way if at all possible. I love them so much I am growing them this spring. I'm gonna try them your way too. Thanks for sharing. Happy 2021🙏❣🍽

Eddie actually did his Mama's version of stuffed cabbage a while back on one of Paula's videos. It was very very close to how our Polish family made ours. (Wonderful) We had a buffet on New Year's Eve with the st. cabbage, baked ham, tato salad, deviled eggs, and a lot of "party" appetizers. Dad made his Egg Nog, And we played black jack for pennies, yes, us kiddos too, 😁 all night long! Such great memories! Happy New Year to all! 🎉🎊🌟🥂🍾🎈

I love black-eyed peas. A friend showed me to take a soup ladle and pour it over lettuce well I thought it sounded horrible until I tasted it. And it was good.

Dear Paula, Hi , from Texas we to eat Blackeyed peas for New Year’s Day for luck and we also eat some kind of greens for money along with cornbread and I will usually have a bought a large thick slice of ham, along with a relish tray with green onions hot peppers, sliced cucumbers, and cherry tomatoes & Ice Tea . You can pre cook beans in the pressure cooker, you clean beans then rinse beans add beans to pressure cooker and add water 1 inch from top of beans and pressure cook for 10 minutes and then you will have presoak beans ready to continue your bean recipe.

My family always did navy beans or great northern beans. I don't like black eyed peas and neither does my husband. We do beans with the leftover hambone and ham from Christmas.

I love black eyes peas, I can't wait to New Year's Day so I Cook them when I want some with good ole cornbread. Can't beat that, sweet potatoes are also good at this meal. Love your cooking show Paula.

Paula instead of salt, season with baking soda, that neutralizes the gas from beans, broccoli, cauliflower brussel sprouts etc. I use it all the time.

Also, if you drain and change the bean soaking water a few hours into the overnight soaking time, it removes the component in the beans that causes the gas- or at least some of it. That’s what we do when making red beans and rice and there is a whole scientific explanation for it
