I have to give a serious testimonial for this pie. I AM a die hard key lime pie fan. It is MY favorite dessert of all time. When we went to the Keys years ago we ate key lime pie in every place that served it to determine the best. I've eaten key lime pie everywhere and I will tell you in no uncertain terms that THIS pie, Paula Deen's recipe, is the BEST, hands down. Nothing else comes close. I had it at Uncle Bubba's restaurant in 2005. For 8 years I thought about that pie and finally was able to get back there in 2013. Confirmed. It wasn't my imagine it is the BEST key lime pie anywhere. Another 7 years has now passed, it's 2020, and I went to Paul Deen's Creekside Restaurant in May (which is the old Uncle Bubba's), had it again. There is NOTHING that even comes close to this pie. Not only it is massive, and double filled from what is shown in this video, the crust because of those almonds, is so crunchy and buttery, the filling is so sweet, creamy and intensely lime and then the thick, cold (real) whipped cream.......OMG!!!!!!!

Seriously it IS the BEST key lime pie you will EVER eat!!!! The slivered almonds make the crust crunchy and its so buttery. It is truly what key lime pie should be. Problem is, after you've eaten this, no other key lime pie comes close. I still dream about this pie!!!

Having lived in Key West I use the original recipe with the Meringue topping and not whipped cream. Jimmy Buffett does it right in his restaurant. Every other place we went used whipped cream and it just isn't the same.

My mother used to make this pie with lemons back when I was growing up in the 1950s-60s. When I began cooking in my first apartment, I found an eggless, no-bake version of the lemon pie recipe in my Joy of Cooking cookbook (1964 edition, 1971 printing, Page 613). You leave out the egg yolks, and stir one-third cup of fresh lemon or lime juice and some zest into one can of Eagle Brand condensed milk. Stir, then pour this filling into a store-bought graham cracker pie crust, and refrigerate it until it gets firm. Top with whipped cream or Cool Whip. The Joy recipe also gives an optional ingredient of two-thirds cup of well-drained canned crushed pineapple added to the lemon filling. I have made the pie with pineapple added to the lemon filling, and it turned out fine. I squeezed the canned pineapple with paper towels before adding it to the filling, in order to remove all the liquid. This no-bake recipe tastes just as good as the original baked version with eggs, and it's a lot less trouble to make. You can also double the filling ingredients if you're using a deep-dish pie crust.

The last time I made it I used a store-bought shortbread pie crust instead of the graham cracker crust. I found it in the same place with the graham cracker crusts in the grocery store. The shortbread and lemon flavors made a delicious combination.

a can of sweetened condensed milk has become smaller. Adapt the recipe and use 1.5 cans of condensed milk and adjust other ingredients, accordingly. Makes for a bigger, deeper pie. Love ya, Paula!

I agree with the details and the tips. But as many have commented, this particular recipe is all over the place. Amounts are off--even though Paula implied she "worked on" the recipe previously. And with something like Key Lime Pie, as in all baking, we need exact measurements. Apparently the book itself is wrong and there's no exact accurate recipe for this version online either.

ckrtom2 I rarely follow a recipe exactly...I would probably add extra lime juice and butter to the crust...to me cooking is a very individual style that you bring to your dish and I add and take away as need be...I can almost never give you exact measurements to a dish I have just made as I do it a little different every time but let me tell you, those dishes come out delicious and I have been cooking a lot of the quarantine dishes Miss Paula is making and they have all come out perfect... I plan to make this pie today...will let you know how it goes...

K Boyd I get that. But when it comes to baking I want exact measurements because it is more scientific than other cooking. Indeed I trust (and like) Paula; all the more reason I want the precise taste she’s creating so I need the precise measurements. Adjusting something randomly and to taste or “experimenting” or fine tuning a recipe is a little different. They were just loose or negligent in the accuracy of the recipe in this video.
