Paula, we have a tradition of making a cake in the shape of a lamb for Easter because Jesus was the Lamb that was slain for us. I agree about the walnuts and raisins in carrot cake. Happy Easter to you and your family! He is Risen indeed!

Miss Paula, Thank you for sharing not only the recipe but memories which is the only thing I have left. My beloved husband passed a year and half ago and not a day goes by that I don't grieve for him...He and my son, my mother and father, my sister...so many loved ones gone...so the holidays are bittersweet but I have beautiful memories. I was BLESSED and I thank God for what he gave me.. But when you have been blessed like we were, the sorrow goes so deep.. I will make this cake, sit down with a cup of coffee (even my cup of coffee doesn't taste the same without him) But I will find comfort in my memories...

Love, your layers were sliding (as well as the icing oozing out between the layers) b/c there wasn't enough XXXX sugar whipped in. Most Cream Cheese frostings use 4 C sugar to 1/2 C butter and ONE pkg cream cheese. Your extra CC block would require at least 3 and even 4 more cups sugar to hold up to the heavier carrot cake layers and 3 layers stacked. My Mom always cut our cakes in slices like that - 7 kids. I never saw wedges of cut cake until I married. And my MIL used to toothpick her cakes too so this gave us a great chuckle!

This cake is absolutely delicious! I’ve been making it for over 10 yrs now 👍🏽 I just cut the sugar instead of 2 cups I use 1 1/2 cup. Freshly grated carrots make all the difference and canola oil! Absolutely the best carrot cake recipe out there..

I love Carrot Cake. I made one last weekend. I made 2 layers that I put in the freezer and made 6 cupcakes. I frosted the cupcakes and they were so good. The frosting is what makes a Carrot Cake so good. I have 2 layers in the freezer that I can use later, just make the frosting. I had never thought about just putting the nuts in the cake instead of the frosting. I had bought some baby carrots to put in a beef roast, and had just enough for my carrot cake. Food is sure too expensive to waste. Thank you Paula, love all your recipes. You are amazing. Years ago, I watched you make your own vanilla flavoring, and I make my own vanilla flavoring out of Grey Goose Vodka and vanilla beans. It is so good. I have not bought vanilla flavoring in years. When I saw how you cut your cake, I got tears in my eyes, My sweet mother used to cut cakes like that too. Brought back so many memories of her, Holidays are still hard without her, but I have my memories to cherish in my heart forever. Paula, you and my mother are the only ladies I have seen that cuts cake like that. You always bring back special memories of my mother.

This reminds me of the first time I made a carrot cake using my great grandmother's recipe. I had to keep changing bowls because there were so many ingredients. I think the recipe called for 5 cups of carrots. 😯 I finally got the cake mixed up and then went on a hunt for baking pans. I finally ended up with 5 pans of different shapes and sizes. I baked a lot growing up but had never encountered a recipe like this one. My great grandmother lived back in the day when they worked a farm and there were a lot of people working long hard days and they were fed well at the end of the day. This carrot cake was probably designed to feed a hungry crowd. I really don't remember how I finally got rid of the huge cake. I'm sure I shared it with a lot of people. 😉 Thanks for this trip down memory lane! ☺️ I don't make carrot cake much anymore. Sometimes I'll buy a single piece at the grocery store. 😋 Thanks for sharing another great video! 🥰

Paula, I make a Carrot Cake too. I leave out the raisins though, and also add Pecans to mine. I bake one and bring to Country singer Crystal Gayle every time I see her. She adores my Carrot cake and I'm so blessed. I've made it for my church staff and many friends and family throughout the years. Carrot cake is my FAVORITE to make. Simple easy and soo sooooo good....!

This is exactly what I was looking for. Old fashioned classic carrot cake. Too many modern recipes over-complicate the cake and it comes out too sticky sweet. This looks perfect!

@@stacey5925 Carrot Cake was my husband's favorite. I would prefer the nuts to be crushed and sprinkled on top of the icing. I like the raisins and as much as I do like nuts, pecans or walnuts I don't like big pieces in the cake. I wouldn't turn down a slice because of it but if I were making it crushed on the top or at least smaller pieces inside the cake would be my preference. I love anything with macadamia nuts in it. I would have to post I gained 6#.😁 Congrats!

If babies aren’t going to be where I take my cake for dessert, I soak my raisins in rum…so good when you bite into a juicy raisin. Thanks Paula, I can’t wait to try your grand momma’s carrot cake. Also I’m crazy for walnuts also. Now my sister has big ole pecan trees around her home; we go over and pick up sacks of those beautiful pecans. So I would use those free nuts considering the price of nuts these days. What everyone does is give my sister the same amount they are taking. So if you pick up two large paper sacks, you take one and give her one on up to however many you are willing to pick up…hot soak in the jacuzzi for my back afterwards for sure. My husband sits watching TV, cracking the nut shells and getting the nuts out. Again, thanks Paula.

I've experimented with all things carrot cake..I like adding 1/2 cup mayo for moistness, small can crushed pineapple (not drained) I skimp a little on the other liquid) and coconut as well as raisins and nuts and carrots....delicious!! Lots and lots of cream cheese frosting.

Wow! I love a good carrot cake. Planning on making one on Saturday night. My recipe is very similar to this but has pineapple tidbits in it. You use a small can of pineapple and mix it with the carrots and raisins at the very beginning, (about 30 minutes before adding) By the time you mix'em in, the raisins and carrots are all plumped up and hydrated. So good.

@@stacey5925 LOL!! Of course not!!! But the raisins often need to be plumped up. So I just mix them together with the carrots for better disbursement. The less mixing of the batter the better. But to be honest, the carrots that Miss Paula used looked like they came out of a bag from the grocery store. I'll bet those could have used some hydration!! 😲 Happy Easter to you and yours. 🐑🐇🐥👍🐰🐣😁
